ve power of plant-based, dairy-free, gluten-free food with you. While I have always loved delicious food, my culinary passion grew dramatically after moving to the United States in 2003. Having an Asian-Indian background, I started with a foundation in vegetarian cooking utilizing lentils, aromatic spices, and a variety of vegetables. Once I moved to this country and found myself exposed to new and exciting cuisines, restaurants, and chefs, I started developing my palate and experimenting with new recipes in my own kitchen. However, after giving birth to my boys, I started experiencing debilitating pain and stiffness in my joints. Facing the prospect of regular medication and a lower quality of life, my passion for food waned and despair started to set in. Fortunately, after countless hours of research as well as trial and error, I discovered that food held the key to my healing. Armed with a newfound mission, I dove back into cooking and eliminated dairy and wheat from my diet while finding new and healthy ingredients to include in my food. As a result, my life has been transformed – my health has returned and I am feeling better than ever. The power of food! While the majority of the recipes you will find on Taaza Table reflect my personal diet of vegan and gluten-free cooking, you will also find some recipes that are only vegan and not gluten-free. I have included these options since some of my family members are not gluten-free. Finding both vegan and gluten-free recipes that taste good is a tall order. My goal is to share the recipes and experiences I have learned on my journey, so others do not have to search as I did.
