Without Fear...

In the Mexican Revolution, Fortino Sámano was shot dead on June 12, 1917 by a platoon of Mexican soldiers.

The photograph of him smoking his last cigarette has been exhibited in galleries across Europe and a copy is part of the collection of the New York Metropolitan Museum of Art.

It was also reproduced in the prestigious collection Photo Poche Number 52, dedicated to Augustine V. Casasola, from the National Photography Center in Paris. The original is housed in the National Photo Library of the INAH in Mexico City.

In the image Fortino waits for the platoon to be unloaded. Body erected and calm look as telling the soldiers and the small group of curious: if it's time to die, this is how it's done: "smiling at death".

SWISS ENCHILADAS

It all starts in the times of the Second Mexican Empire (1864-1867), when many regional dishes were added European cream and cheeses.
Emperor Maximilian's cooks made adjustments to Mexican recipes to satisfy the ruler's taste and reduce the spiciness. And I don't mean the chef Josef Tudos or the cook Gräf, but the modest butler Rodrigo Llanes.

At the fall of the empire in June 1867, Llanes settled with his family in Coahuila carrying with him his recipe book. This is narrated by the chef owner of the restaurant Jolgorio, great-grandson of this cook or butler.
Years passed, and when the Mexican Revolution broke out, the "Imperial Cook" returned to the CDMX with his family fleeing the war.

In this city opened the CAFE IMPERIO where they prepared many of the recipes that Maximilian de Habsburg tasted, such as the Panqué Imperio or the dish Dientes de Odalisca, which were actually Skites with cream and cheese.
Just like chicken enchiladas in salsa verde with cream and granite cheese, the iconic Swiss Enchiladas.

It is said that the name comes because the cheese reminded the emperor of the snow that covered the Swiss Alps, or because the name was very "avant garde", when everything French was fashionable in the Porphyriate.

Cafe Imperio ended up closing its doors, many of its customers began to suggest that they prepare them in other popular restaurants in the capital, among them the agonizing Jockey Club in the old palace of the Counts of the Valley of Orizaba, better known as the House of Tiles.

Starting in 1917, the brothers Walter and Frank Sanborns would rent this place where they popularized and perfected them, becoming an iconic Mexican dish.

Hello and welcome!

I´m Jacqueline or Jackie, as some like to call me, a cultural tour guide for Mexico City certified by the Ministry of Tourism (Sectur). I´m a native of San Francisco, California but have been living in CDMX for more than half my life being that it is the land of my ancestors. I love this vibrant city for its cultural diversity and I love to share it with people who would like to delve deeper into this interesting metropolis yet still mysteriously unknown for many. I offer private tours to different points of the city from two hours long to half day or whole day, take your pick and I can also customize private tours to your taste.
