One of my family's favorites for dinner... "potato bar". Soooo many options depending upon what you have in your fridge. Italian, Mexican, breakfast, or Asian all on potatoes. Tonight's assortment of toppings: shredded cheese, feta cheese, Bacon, sour cream, onions, salsa, wild cabbage salsa, sliced smoked turkey, sunflower sprouts, tomatoes, balsamic pan seared cabbage, wine glazed mushrooms, and a garlic-wine cheese sauce. Yum! And really SO easy!

Here is the recipe I made up for a great gluten-free Chocolate-y Chocolate Cake, and the picture from the cake I made recently for my friend's son for his birthday.

Rae's GF Chocolate-y Chocolate Cake:

1 stick softened butter (to make dairy free use all expeller pressed coconut oil instead)
1/2 cup expeller pressed coconut oil
1 1/2 cups rapadura (coconut palm sugar, or sugar)
3 TBLS organic pure maple syrup
stir until combined
add:
3 eggs
stir
add
1 cup cocoa powder
1 1/2 cups Pamela's GF Baking mix
1/3 cup coconut flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2 tsp vanilla
lightly stir and add:
Approx. 2 cups almond milk (or milk of your choice)
add enough milk to make the consistency of cake batter... not too thick, not to watery.
*For brownies, eliminate the almond milk and the baking powder, add an extra 1/2 tsp of baking soda.
Bake at 350* until you start to smell them and they are not jiggly... do not over bake!

Ganache Frosting -
3 cups organic chocolate chips
3/4 cups organic cream
1 TBLS coconut oil
pinch of salt

OR:
Optional traditional frosting:
1 1/2 - 2 cups organic powdered sugar
1/2 cup cocoa powder
1 tsp organic cornstarch
1 stick softened butter (for dairy free use coconut oil)
1/2 tsp vanilla
dash of salt
milk to soften to desired consistency, start with 3 TBSP.
Mix.

Add fresh organic whipped cream in between with fresh fruit like bananas, blueberries, strawberries or raspberries!

If I can’t use what little money I have to help support and build these sorts of communities, what the hell good is it? This is why we’re here, folks. Someone asks why I would pay $10 for a gallon of milk? Community and affection is my answer. If we can’t be bothered to support those—even when it costs more, or it’s less convenient, a greater challenge—than we’re in dire straights, indeed. We have to think about and see the patterns. A gallon of milk is not a gallon of milk. A carrot is not a carrot. A human being is not a human being and a community not a community. They’re all dependent on context.
