Culinary Tip: French fries for banqueting. Chef's want to do a fresh potato fry. Always opt for a frozen fry in banquets. I use a "Wendy's " style fry, it holds temperature longer, and the quality of cooking is more consistent. Like Rx for Events for tips!

Was doing a menu tasting at a restaurant last night. We had a drink called "Orange is the new Black". Clever, I thought when we ordered this orange based drink. But it had no "black" representation anywhere. So then I thought, "what was the point of the drink?." If you are going to name a drink after something then follow the thought process through the whole way. Otherwise it doesn't make sense. It looks silly.

Hanging out with Leslie and Chef Hector Santiago this weekend I learned a lot about Limes. Chef Hector said once you squeeze a lime you should try to hold the juice approx. 4 hours before using. That is when the juice is at its' best. Then it starts the downhill slide as it can "self pickle" and then you as a drinker would be in a pickle!

Big shout out goes to The Sheraton in Seattle. Why you ask? They are one of the few hotels that lets the consumer know how their service charge is being distributed. Good for you!
