🧁🍫 Rolo Cupcakes! 🍫🧁
📝 Cupcake Ingredients:
200 g unsalted butter (room temperature) 🧈
200 g light brown soft sugar
4 medium eggs 🥚
150 g self-raising flour
50 g cocoa powder
24 Rolos 🍬
🎂 How to Make the Cupcakes:
1️⃣ Preheat your oven to 180°C/160°C fan and line a cupcake/muffin tin with 12-14 large cupcake/muffin cases.
2️⃣ In a mixing bowl, beat the unsalted butter with the light brown soft sugar until it's light and fluffy.
3️⃣ Add the eggs, self-raising flour, and cocoa powder to the butter-sugar mixture, and mix until well combined.
4️⃣ Spoon the batter into the cupcake cases evenly, and gently press 2 Rolos onto the top of the mixture in each cupcake case.
5️⃣ Bake in the oven for 18-22 minutes until the cupcakes are baked through and springy to touch. Be mindful of the Rolos in the middle while doing the skewer test. Once baked, let them cool completely on a wire rack. 🕒
🎂 Caramel Buttercream Frosting Ingredients:
200 g unsalted butter (room temperature) 🧈
350 g icing sugar
75 g caramel (I used Carnation caramel)
🎂 How to Make the Frosting:
1️⃣ In a mixing bowl, beat the unsalted butter for a couple of minutes to loosen it.
2️⃣ Gradually add the icing sugar and beat slowly until it's well combined.
3️⃣ Increase the speed and beat the mixture for 3-4 minutes until the frosting is fluffy and smooth.
4️⃣ Add the caramel to the buttercream and continue mixing. Keep beating for 5 minutes until the frosting is beautifully whipped! 🌬️
🍰 Decoration:
Use a Large 2D closed star tip to decorate your cupcakes with the buttercream. You can get creative and use your preferred piping style! 🌟
Drizzle slightly loosened caramel over the cupcakes using a spoon for a delicious caramel touch. 🍯
Melt the milk chocolate and drizzle it over the cupcakes for a delightful chocolatey drizzle. 🍫
Finally, top off each cupcake with a Rolo for the perfect finishing touch! 🍬
