Getting ready for the ball to drop on Tuesday? Culture Magazine suggests pairing bubbles with triple cream cheeses, which play nicely with the acidity in brut et al bubbles, and avoiding anything too salty, unless you're serving an off-dry or slightly sweet wine.

Whether you opt for capital-C Champagne or a sparkling white from elsewhere in the world, bubbly is our favorite thing to pair with cheese.

Have you met Enoch? Slightly smaller than our largest vehicle, but just as fun, Enoch is a Mercedes Sprinter 2500 with a luxurious customized interior. It's ideal for groups of 4 to 6, and which can seat up to 8. There are two rows of captains chairs, a bench in the third row, and a front row passenger seat.

Nimble and graceful, it’s a fantastic vehicle for our collectors’ smaller tours!

Leviathan 🤩

With 6 quilted leather captain’s seats, a rear-facing bench with an armrest that folds up into a jumpseat, & a generous center aisle, Leviathan is our largest vehicle. It accommodates up to 7 guests facing forward, & up to 10 total. Guests can adjust lighting in a range of colors, play films or make presentations on a widescreen television, and play music over bluetooth on Leviathan’s earth shattering speaker system. A rear storage area provides storage for provisions, or several cases of wine. This is the perfect ride for the serious collector.

"To better understand my risks, I called Dr. Miles Hassell, an internal medicine specialist who practices in the Comprehensive Risk Reduction Clinic and established the Integrative Medicine Program at Providence Cancer Institution of Oregon in Portland. He keeps up with the scientific literature on diet and health like few people on this planet.

Hassell ripped off a list of studies with titles like the “Prospective Urban Rural Epidemiology Study,” “Nurses' Health Study,” “European Prospective Investigation into Cancer and Nutrition” and “INTERHEART.”

“In every major epidemiological study of which I am aware, and I don’t use the word ‘every’ lightly, when you look at alcohol consumption, people with low to moderate consumption have lower total mortality than those who drink too much or don't drink at all,” says Hassell."
