How to make Tepache (Fermented pineapple juice)

Wikipedia says: "Tepache is a fermented Mexican beverage made from the peel and the rind of pineapples, and is sweetened either with piloncillo or brown sugar, seasoned with powdered cinnamon, and served cold."

What you need...

1 small bucket with a lid
2 large ripe pineapples
1kg of brown sugar
1 orange
2 handfuls of raisins
2 cinnamon sticks

Remove the crowns of the pineapples and cut off the top and bottom ends. Cut the pinapple and orange into small pieces, skin and all. Pineapple skin has a naturally occuring yeast. Add the pinapple, cinnamon and all the ingredients into the bucket. Add water and brown sugar. Stir until the sugar dissolves. The yeast will feed on the sugars.

Cover with the lid. You should start seeing froth on the mix within the first three hours. It means the fermentation has started.

Stir daily and taste. You should get a tangy, flavour by the third day. Strain and bottle on the fourth day.

Once bottled, you have to burp at least once a day as it carbonates. Yes. It's fizzy and bubbles like sprite.
