Can you guess the star ingredient in these Ukrainian-style dumplings from Kachka? 🤔

If you guessed cherries, you’re spot-on! Stuffed with sour cherries, these vareniki are a sweet spin on traditional savory Ukrainian dumplings. Topped with creamy smetana (sour cream), these dumplings walk the line between sweet and savory, with a tartness that makes our mouths water.

I watched the Solstice sunrise from the summit of Mt Hood. Of course, the sunrise was incredible, and views of volcanoes from Rainier to South Sister and all the ones in between.

But was even more amazing, and maybe because it was a first for me. Two things actually.

On the way up, there was little time to check out the scenery (it was dark anyway), but as I was climbing Old Chute, the dawn was starting to break. And I took a look around to see ice and snow sculptures and the crater below me that I had just climbed. Everything covered in snow with the crack of dawn - I saw every shade of white and muted blue that exists. It was magical. And I grabbed a picture on the way down, although it was daylight by then (still gorgeous).

And second - as the sun came up in the east, and I looked west, I saw the shadow of the mountain hanging out like a surreal hologram. It grew and became prominent. It was like a shadow of a tree, only a whole lot bigger!

This sunrise on Mt Hood really was one of those "I'm at the edge of the earth" type experiences.

Nestled in the mezzanine above the dining room of Kachka sits Lavka, their speciality market, which carries a diverse assortment of eastern European deli & pantry items, and imported wine & beer. If you’ve ever taken a walk through the streets of Portland, you may have noticed iron rings fixed to our sidewalks, remnants of a time when horse-drawn carriages were all the rage. They were removed for safety reasons until the late 1970s, when a Portland resident complained about the rings disappearing. The city conceded and in 2005, The Horse Project began when a like-minded Portlander tied the first plastic toy horse to a ring in the Pearl District. Today, you’ll often find tiny horses tethered to antique rings scattered across the city.
