Prepare to happily sniff, cry, and shake during Edmond Fallot’s interactive, senses-tingling “Sensations Fortes” tour in Beaune, France, as you mimic a mustard seed being transformed into the company’s famed Dijon mustard, a centerpiece of Burgundy’s culinary heritage.

Founded in 1840, the factory for this family-owned business continues to operate in its original premises just steps away from the historic center of Beaune. Here, Edmond Fallot still produces Dijon mustard the artisanal way – milling mustard seeds with hulking stone grinders to conserve their pungent aromas and flavors.

Enjoy reading more about Edmond Fallot and the ancient traditions of mustard making in my new story on The Roads Traveled.
