Zucchini Brownies - I am posting this recipe again as it was so popular. Hope you enjoy.
It's that time of the year when zucchini is in abundance. So, do you need a recipe to help use up all that zucchini? Here is a recipe for zucchini brownies from the cookbook, Cooking with the Horse & Buggy People II. These brownies are soooo moist and you would never know that they have zucchini as one of the ingredients. Hey, this is a great way to get your kids to eat zucchini and they will never know unless you tell them. ; ) lol
Zucchini Brownies
4 eggs
1 1/2 cup oil
2 cup sugar
2 cup flour
2 tsp. soda
2 tsp. cinnamon
1 tsp. salt
4 Tbsp. cocoa
1 tsp. vanilla
3 cups shredded zucchini
1 cup nuts
Beat eggs, oil, and sugar. Sift flour, soda, cinnamon, salt, and cocoa. Mix well. Add vanilla, zucchini, and nuts. Mix all together and spread on a 10x 15 jellyroll pan. Bake at 350 degrees for 30 minutes. These are good plain, but you may frost them with you favorite frosting.

This is the recipe I used for my frosting.
Chocolate Frosting
1/2 cup butter
1 tsp. vanilla
1 1/2 cup sugar
1/3 cup evaporated milk
Combine in pan. Stir well and bring to a boil for 1 minute. Stir in 1/2 cup of chocolate chips. Stir until melted. Spread on brownies immediately.
