We are so thankful for all that we have. Hope you have a Happy Thanksgiving.
For those of you who want to make rolls for Thanksgiving, here is a recipe I have used. It is a wheat bread recipe from the Amish Wedding Story and Cookbook. They turned out great and taste good too. : )
Wheat Bread (I made them into rolls)
3/4 c. sugar
3/4 c. flour
1 Tbsp. salt
3 c. warm water
2 Tbsp. (2 pkg.) yeast
3/4 c. vegetable oil
2 c. whole wheat flour
6 c. white flour
Recipe by Mary Troyer
Mix sugar, flour and salt. Add water. Stir well and add yeast. Let set until it rises a bit, then add vegetable oil. Mix well, then add flour. Mix well. Let rise until double. Form into 3 loaves or rolls and let rise. Bake at 350° for 25-30 minutes.

We had another busy Memorial Day weekend this year. Last Memorial Weekend our oldest daughter got married and this year our second daughter, Victoria married Jeff Fink. Congratulations to our daughter and new son-in-law!
We are so thankful for the price that Jesus paid for us and to know that HE LIVES!!

Here is an idea for Christmas morning breakfast.
Amish Maple Nut Twist Rolls - start your day with the taste of Amish Country for breakfast or for any time for that matter! Enjoy the taste and savor the aroma. We tried these mouth-watering Maple Nut Twist Rolls . . . and were they ever good!
Amish Maple Nut Twist Rolls
Ingredients:
1 Tbsp. Yeast
1/4 c. water
3/4 c. milk
1/4 c. butter
1 egg
1 tsp. Maple flavoring
1/2 tsp. salt
3 Tbsp. sugar
3 c. flour
Filling:
1/4 c. butter, softened
1/2 c. brown sugar
1/3 c. nuts
1 tsp. Cinnamon
Glaze:
1 c. Powdered sugar
1 Tbsp. Butter
1-2 tsp. Milk
1/2 tsp. Maple flavoring
Dissolve yeast in water. Heat milk and butter until scalded. Cool and add yeast. Beat egg, maple flavoring, salt and sugar. Add flour. Cover and let rise for 1 hour. Divide into 2 equal parts. Roll out 1 part and put in greased round pizza pan. Put filling ingredients on top. Roll out second part of dough and lay over filling. Use a greased pizza cutter and slice toward the middle, leaving 2” in the middle not cut. Continue cutting, making 12-14 slices. Twist each slice 2 times. Let rise and bake at 350° for 20 minutes. Drizzle with glaze.

Zucchini Brownies - I am posting this recipe again as it was so popular. Hope you enjoy.
It's that time of the year when zucchini is in abundance. So, do you need a recipe to help use up all that zucchini? Here is a recipe for zucchini brownies from the cookbook, Cooking with the Horse & Buggy People II. These brownies are soooo moist and you would never know that they have zucchini as one of the ingredients. Hey, this is a great way to get your kids to eat zucchini and they will never know unless you tell them. ; ) lol
Zucchini Brownies
4 eggs
1 1/2 cup oil
2 cup sugar
2 cup flour
2 tsp. soda
2 tsp. cinnamon
1 tsp. salt
4 Tbsp. cocoa
1 tsp. vanilla
3 cups shredded zucchini
1 cup nuts
Beat eggs, oil, and sugar. Sift flour, soda, cinnamon, salt, and cocoa. Mix well. Add vanilla, zucchini, and nuts. Mix all together and spread on a 10x 15 jellyroll pan. Bake at 350 degrees for 30 minutes. These are good plain, but you may frost them with you favorite frosting.

This is the recipe I used for my frosting.
Chocolate Frosting
1/2 cup butter
1 tsp. vanilla
1 1/2 cup sugar
1/3 cup evaporated milk
Combine in pan. Stir well and bring to a boil for 1 minute. Stir in 1/2 cup of chocolate chips. Stir until melted. Spread on brownies immediately.
