... the only place to be is Positano!
Renowned for its 'sfusato' lemon, from which the deliciously refreshing liqueur limoncello is made, one also finds these citrus fruit called 'cidrone' (picture below). The flesh is eaten sprinkled with either salt or sugar, but rather these giant fruit look so bright and happy in a bowl!
Here's a recipe (tried and tested) to craft your own limoncello at home ...
Ingredients for 2 litres:
About 8 ripe lemons, washed (you use only the peel)
750 ml bottle vodka
1 litre water
700 gm sugar
Pour the vodka into a glass container, one with a lid
Either with a knife or vegetable peeler, remove the peel of the lemons. Make sure any pith (the white part of the skin) is cleaned from the peel, as this adds a bitterness you don't want.
Then add the peel to the bottle of vodka, seal, and leave to stand in a cool, darkened place (a cupboard would be good!), for a week.
During the week, give the bottle a shake to stir up the peels in the alcohol.
Once the week has past, you need to make a sugar syrup. To do this, over a heated stove, add to a pot the sugar and water. Stir to dissolve - this takes about 3 minutes from mixing to boiling. You now have your syrup. Remove from the heat and allow to cool.
Then take the container with the lemon peels (you will have noticed the alcohol has taken on a yellowish tinge - it has drawn the essential oils from the peel), remove the peels, and pour the lemon alcohol into a pot with the sugar syrup.
Mix well together.
Have a taste - you may need to adjust to your liking ... if it is too strong, soften a bit by adding a little more water.
Decant the mixture into bottles which can either be corked or capped.
There are various thoughts on this last part - some tradionalists say to leave the bottles standing for 40 days before it's best to drink, others say 20 days. I've tried much sooner than that and it's just delicious!
Limoncello is best served cold. It pairs well with dessert or can be mixed with prosecco and soda to make a really refreshing summer spritz.
The best thing about sipping on a limoncello or spritz is that you are seemingly instantaneously teleported to Positano!
