MOROCCAN LENTIL SHAKSHUKA 🥚🍳🍅 $4.15 PER SERVE 🍅 Recipe Below 👇

Imagine the look on Dad’s face when he’s served breakfast in bed or gathers around the table for a hearty lunch. This Father’s Day (or any day!), why not treat him to something truly special—our Moroccan Lentil Shakshuka? This delicious twist on the traditional dish adds the earthy, rich flavor of lentils to the vibrant mix of tomatoes, bell peppers, and perfectly poached eggs.

With only five ingredients, this dish serves four and is ready in just 50 minutes in the oven. This Moroccan Lentil Shakshuka is both simple to make and satisfying to eat. Whether you’re planning breakfast in bed or a relaxed family lunch, it’s a dish that’s sure to impress.

INGREDIENTS:

-1 cup of our Moroccan lentils
-2 cup spinach leaves
-1 red capsicum
-1 tin cherry tomatoes
-4 eggs
-3 cup water
-1 tbs olive oil
-Chopped coriander and chilli to serve (optional)

METHOD:

1. Slice the capsicum into thin strips.

2. In a 30 cm saucepan, heat 1 tablespoons of vegetable oil over medium heat.

3. Add 1 cup of our Moroccan lentils and fry for 1 minute.

4. Add 2.5 cups of boiling water, along with the tin of cherry tomatoes, capsicum, and spinach. Cook in a preheated oven at 180°C for 45-50 minutes with the lid on. Check the lentils around the 35-minute mark and add 1/2 cup of water if needed to ensure they don’t dry out.

5. Remove the saucepan from the oven, make 4 wells in the mixture, and break eggs into the wells.

6. Return to the oven and bake for another 7 to 12 minutes, depending on how runny or firm you like your yolks.

7. Optional: Garnish with chopped coriander and chili.

Our Indian Rice Pudding Smoothie with Frozen Mango is a delightful twist on traditional Indian rice pudding, transforming it into a refreshing and nutrient-packed smoothie. This recipe serves 8 and is ready in just 30 minutes, making it an ideal breakfast on the go or a convenient make-ahead meal to enjoy throughout the week.

Packed with vibrant flavors and wholesome ingredients, this smoothie is sure to become a favorite in your household. So, get ready to blend up some deliciousness and start your day with a burst of energy!

Ingredients:

-1 packet of our Indian rice pudding
-500ml cow’s milk
-1 tin coconut milk
-400g frozen mango
-2 tbs butter
-Water to taste
-Mint & toasted coconut chips to decorate if you are feeling fancy!

🌱 For a vegan option, substitute the butter with margarine and use another tin of coconut milk in place of the cow’s milk.

Method:

1. Heat 2 tablespoons of butter over medium-high heat in a saucepan.
2. Add the contents of the packet, followed by the cow’s milk and coconut milk.
3. Simmer uncovered over medium-high heat for approximately 30 minutes, stirring occasionally, or until the rice is cooked to your desired consistency and the sauce is creamy.
4. Allow it to cool slightly, then add the frozen mango and water to reach your desired consistency. Blend until smooth.
5. Mint and toasted coconut chips make a delightful garnish if you’re feeling fancy!

Ready to elevate your winter evenings with this easy yet gourmet recipe that everyone in the family will love?

Ingredients:

-1 packet of our Tuscan Risotto
-300g thawed frozen peas
-60g rocket leaves
-1 tin anchovy fillets
-1.5l hot water
-1 tbs olive oil
-2 tbs butter
-Parmesan to taste

Method:

1. Put the peas into a food processor with the water and blend until completely puréed to create a pea stock.

2. In a 30 cm saucepan, heat 2 tablespoons of olive oil over medium heat. Add the contents of the packet and fry for 1 minute.

3. Add 1/3 cup of white wine, stirring constantly until the wine has evaporated.

4. Then, add 1/2 cup of the pea stock and continue stirring until it evaporates. Repeat this process, adding 1/2 cup of the stock as needed.

5. As soon as the rice is al dente, stir in butter and Parmesan to taste. Decorate with rocket, anchovies, and a few of the peas, and serve immediately.

SERVES: 4 PREP TIME: 10 min COOKING TIME: 20 min

Ingredients:

1 packet of our Valencian Style Paella rice
2 chorizo sausages sliced
3 chicken thighs diced
1 calamari tube sliced
4 tiger prawns
12 mussels
1/2 cup fresh green peas (frozen will do too!)
1/2 cupsicum diced
3 tbs olive oil
3 tbs chopped tomatoes
4 cups chicken or fish stock
Chopped parsley and lemon wedges to serve

TIPS
It is essential to this recipe to buy nice fresh seafood.
For a vegan version leave out the meat and seafood and substitute for your favourite veggies.

Method:

-Heat oil over high heat in a paella pan or wide shallow frying pan.
-Add chorizo, chicken, calamari and capsicum and fry for few minutes.
-Once browned add diced tomatoes, green peas and rice and fry for a further 2 minutes.
-Add stock and cook for 20 minutes or until water has been absorbed and rice is al dente.
-For the last 5 minutes of cooking add the prawns and mussels.
-Remember to do not stir the pan once the stock is added to ensure a golden crust on the base.

Serve with lemon wedges and chopped parsley and make sure to have a glass of nice wine and crusty bread to go with it! Enjoy.

As the temperatures drop and the days grow shorter, there’s nothing quite like cozying up with a hearty meal that warms you from the inside out. Our Dhal Shepherd’s Pie recipe is the perfect winter warmer, combining the comforting flavors of Indian dhal with the classic appeal of shepherd’s pie.

With our convenient Indian Dhal Meal Kit and just 5 more ingredients, you can effortlessly prepare an amazing dinner to serve eight. And if there is an abundance of food for your household, no worries – any leftovers can be easily frozen for a delightful meal another day!

This dish is not only hearty and authentic but also incredibly easy to prepare, making it an ideal choice for busy weeknights or lazy weekends spent indoors.

SERVES: 8 PREP TIME: 5 min COOKING TIME: 50 min

Ingredients:

1 packet of our Indian Dhal
280g spinach leaves
200ml coconut cream
1 tin cherry tomatoes
1kg sweet potatoes, peeled and cut into small chunks
1/2 cauliflower
Chopped coriander and chilli to serve

Method:

1. Place the sweet potato in a pot of boiling water and cook for 15 minutes or until tender.

2. In a 30cm saucepan, heat 2 tablespoons of vegetable oil over medium heat.

3. Add the contents of the packet and fry for 1 minute.

4. Then, add 5 cups of boiling water and the tin of cherry tomatoes. Cook for 50 minutes (with the lid on) or until the lentils are done and the gravy is thickened. Add extra water if needed.

5. Halfway through cooking, add cauliflower florets. Stir in coconut cream and and fresh spinach for the last 5 minutes.

6. Once the sweet potatoes are cooked, drain and mash them.

7. Spoon the Indian Dhal into a large dish. Spread dollops of sweet potato mash on top and smooth to the edges. Use the back of a fork to create lines or peaks in the mash (this will help it crisp up).

8. Bake in the oven for 25 minutes. Consider placing the dish on a baking tray to catch any spills.

9. For extra crispiness, switch on the grill and cook for a few more minutes.

10. Garnish with coriander and chilli before serving. Enjoy with roti bread.
