I a food processor-
๐ง flour
๐ง Cold butter from the fridge - cut into cubes
Process lightly at medium speed to crumbs.

Do not process quickly and for a long time it makes the texture of the cookie hard
Add the finely ground almonds
Egg yolk
Baking powder
Lemon zest
Salt
Process just until formed
You can add a spoonful of milk if the dough is dry.
Remove from the food processor, transfer to plastic wrap - arrange into a round, flat disk, put in the refrigerator for an hour.
After an hour, take out and roll to a thickness of 1/2 centimeter.
