This BBQ Friday Chef's Z does a bit of infusion. Texas BBQ meets classic Italian. Making some smoked and stuffed brisket meatballs with homemade pasta sauce. For the sides we have some Arancini made with homemade smokey chicken stock and some Cacio e Pepe Brussels Sprouts. Can't wait! I have a few boxes left DM for details.

I like to use post oak logs and add some mesquite wood chunks for flavoring. I smoke these burgers for two hours then straight into a hot pan. More on that later.

My whole bird is about done. I'm at 155 u at gave it the final spritz.
1 hour in starting to spritz the chicken. I used apple juice, apple cider vinegar and #grandmarnier I'll spritz the chicken every 1/2 hour till done.
