Throwback Thursday - just one week ago I checked in to the beautiful Disney’s Coronado Springs Resort for a quick visit. What a lovely resort with wonderful grounds, very comfortable rooms and lots of dining options.

The 2024 EPCOT International Food & Wine Festival is in full swing and we were able to visit the park a few times during our trip. There were so many delicious options to choose from and it was very difficult to decide what to try.

Here is a small sample of the best things I ate at this year’s festival.

🔺BBQ Pork Rinds served with Pimento Cheese
🔺Roasted Warm Water Lobster Tail with Garlic Butter

I'm so excited about all the new rides and attractions coming to Walt Disney World! I'm particularly looking forward to the new night time parade coming to Magic Kingdom because I love this park at night and no doubt the new Villains land and Cars-themed areas will be amazing too.

About me...

Apart from having watched The Wonderful World of Disney on Sunday evenings as a child, my real introduction to the magic of Disney came as an adult, when I first visited Walt Disney World with my children. Seeing it all through their eyes and experiencing the incredible customer service provided by the Disney Cast Members has resulted in many return visits over the past 15 years.

As a single mom of three, Disney has been an ideal vacation destination where we can all relax and enjoy ourselves knowing we will be well taken care of. An initial trip with young children turned into many trips with tweens and teenagers and now young adults. In addition to family trips, I’ve also enjoyed several adult-only getaways and even a solo visit.

I strive to make each our Disney vacations new and unique by trying something different – making a reservation at a restaurant we’ve never tried before or booking one of the many special events and tours offered at the parks. Over the years we have taken advantage of many of these options including Mickey’s Not So Scary Hallowe’en Party, Mickey’s Very Merry Christmas Party, the Epcot Food and Wine Festival, and the Epcot Flower and Garden Festival. We’ve participated in the Keys to the Kingdom tour in Magic Kingdom, the Wild Africa Trek in Animal Kingdom and the Starlight Safari at Animal Kingdom Lodge. We’ve even headed to Walt Disney World for a few RunDisney events.
