I had this idea of exploring cities around the world, not just via the local food that I consume but through experimenting with local cuisine by cooking the dishes myself. The unique part about this project is, I invite the chef of a restaurant/cafe/bar or street stall or a local with a kitchen to show me how to do it and then allowing me to cook it in their kitchens. While I cook, I document the

cooking process and also enquire of the story behind the
dish. I figured that every dish from a specific kitchen has its own story, hence the start of this website. This website will feature stories of the dishes, the kitchens and the chefs from different parts of the world and it my greatest wish that you will eat and taste through these countries vicariously through us. Questo blog nasce dal mio amore condiviso per la voglia di viaggiare e la buona cucina. Ho avuto questa idea di esplorare le città in tutto il mondo, non solo attraverso il cibo locale che consumo, ma anche attraverso la sperimentazione di esso, cucinando i piatti da me. Lo svolgimento di questo progetto è semplice; invito lo chef di una bancarella, ristorante, caffetteria, bar, per starada on in case private che abbiano una cucina a mostrarmi come cucinare un piatto a loro scelta, per poi metterlo in pratica da solo. Mentre cucino, documento il processo di cottura con varie foto, e cerco di scoprirne l'essenza. Ho pensato che ogni piatto, cucinato da una cucina specifica ha la sua storia, e quindi l'inizio di questo sito web. Questo sito sarà caratterizzato da storie dei piatti, le cucine e gli chef provenienti da diverse parti del mondo ed è il mio più grande desiderio quello di farveli gustare in ogni paese indirettamente attraverso di noi.

When you spend most of your time travelling, traveling becomes living, and the meaning of existence is contained in going, arriving, seeing, knowing.
Being part of the world, this is what Stefano has wanted ever since, as soon as he came of age, he said goodbye to his parents and began his very long journey that will take him to every corner of the planet, between extreme experiences and enlightening encounters.
By hitchhiking, by van, by train, on foot, every means of transport will be useful to lead him to seek happiness everywhere, aware of being born with this single mission: to mix with others and with nature.
His is a fascinating, funny, emotional story. In this book he reconstructs his life, including risky choices, changes and challenges, until he discovers that there is no place called home, except within oneself.

The Missing Dish 🍽️

My kitchen could be a museum of exotic dishes that have never been finished. An "Emmaus Supper" 2.0 where I try to recreate the super dish I enjoyed in Laos. More of an "Introspection Dinner" where each dish has a personal touch and a pinch of nostalgia
