Dashi-yaki. Fabulous egg dish. Whole eggs are beaten with flavorful dashi and cooked in the iron pot. In seperate pot, another whole egg is beaten with a little kudzu root powder (kuzu) and finely chopped leek. Mixed together, it was rich and savory. #kibunjojo #kyotofood @gowithpeggy #kyotoeats
Chef Kieron Hales, Zingerman's, Corman Farms
Chef Kieron Hales's first internship was with Paul Bocuse as a teen. From there he travelled around to 27 countries before ending up in the USA. He became part of the team as a chef at Zingerman's Roadhouse until he became the proud owner of Cornman Farms.
He said, "after all those years cooking fancy French food, I never knew where the food was coming from or who grew it. I wanted to grow my own food to cook". Kieron is 35 years old.
It was a blast cooking with him yesterday and today. 400 cappelletti later. He tooled the pasta. We filled and folded.
