Did you know? When Thomas Hart Benton created the ‘America Today” mural in 1930-31, he included hidden symbols and personal touches throughout the panels. One of the most interesting details is that Benton included a self-portrait in the mural! In the panel titled “Steel”, Benton painted himself as a worker, welding alongside others in a steel mill. This was his way of embedding himself into the narrative of American life and labor.

Each pâtissier puts their own spin on it, from classic recipes to modern twists. Traditionally, a bean is hidden inside, and the person who finds it is crowned king or queen for the day! Our team’s favorite spots for the best galette in Paris?

1. : This modern take on the galette brings together zesty citrus and sweet honey, all in a light, flaky pastry for a fresh and sophisticated treat

2. : Created by Etienne Leroy, named Best Pastry Chef in the World in 2017, this galette features crispy puff pastry, citrus-soaked panettone, fragrant frangipane, and indulgent orange confit, crowned with crunchy almonds and candied orange.

3. : Inspired by the delicate « rose » windows of Notre Dame here in Paris, star Pastry Chef Nina Métayer & The French Bastards Bakery Team collaborated on this magnificent limited edition using AOP Charentes-Poitou butter, cinnamon, frangipane & real almonds.
