For those who are not familiar, Pissaladière is an "advanced version" of Pissalat, a spread from Provence made of anchovies and olives.
Pissaladière is focaccia dough topped with caramelized onions, black olives, and anchovies. It doesn't get better than this 😀

So what is Aioli?
It is a rich and creamy sauce that comes to us from the Provence region. Legend has it that Aioli was created by simple fishermen who needed a way to enhance the flavors of their fish with simple ingredients. This magical sauce was born from a simple combination of crushed garlic and olive oil.

In the US, after years of adding various ingredients to mayonnaise, there began to be confusion between garlic mayonnaise and Aioli. There's no such thing as garlic Aioli.
It's like saying tomato sauce with tomatoes.
There are spicy mayonnaise, mint mayonnaise, pesto mayonnaise, and even black mayonnaise. |There are endless inventions, but we'll leave the Aioli to Provence.

So where can you taste the best Aioli in Nice? Here are some recommendations:

Restaurant Acchiardo - A long-standing family restaurant in the heart of Nice's old town. Here you will find the most authentic Aioli, served with fresh fish and local vegetables.
Maison Auer - This shop has been around since 1820 and is definitely worth a visit.
