Sunday Night Meal Prep…Tuesday’s Meal 🥘
Grilled Chicken, Sweet Potatoes and LeSueur Peas:

1.Prepare your Sweet Potatoes an hour ahead of time. Preheat oven on 425. While oven is preheating wash Sweet Potatoes thoroughly and then rub olive oil on the outside of each Sweet Potato. Take a fork and punch several holes into the Sweet Potatoes. Place foil on cooking sheet and then place the Sweet Potatoes on top of foil. Place Sweet Potatoes in the oven and cook for 50 to 60 minutes, depending on size.

2. When Sweet Potatoes are almost done, simply pour a can of LeSueur Peas into pot/pan on stove top while adding one tablespoon of butter. Heat on medium and bring to a boil. Once peas have come to a boil cover after one minute to make sure they have been thoroughly heated and remove them from stove eye. *We love LeSueur Peas at our house, so we purchase them in a bulk/box of 8 at Costco because they run close to $2.00 a can in most stores. They are $10.49 per box which makes them $1.31 a can. Before inflation hit they were priced a little over $8.00 a box at Costco…one of the best deals I ever found on LeSueur Peas.

3. Reheat Chicken Breast that you meal prepped and grilled Sunday night and you have a quick simple delicious meal ready to enjoy without a lot of effort!

Sunday Night Meal Prep…Monday’s Meal 🥘
Grilled Chicken, Bacon, Egg & Avocado Salad
Ingredients:
1 Grilled Chicken Breast
1 Cup of Sliced Cucumbers
2 Boiled Egg
1/2 Medium Avocado
2 Slices of Bacon
Kinder’s Premium Quality Seasoning Lemon Pepper or Lemon Pepper of choice (purchase at Costco)
Olive Garden Signature Italian Dressing (purchase at Costco)

Directions:
1. Cut up your cucumber into slices. I chose to cut my slices in half. Place one cup of sliced cucumbers on bottom of bowl. *I use a soup bowl when making it individually/one person.
2. Take boiled eggs, cut up, and spread out on top of cucumbers.
3.Peel and cut up Avocado into small bite size chunks. Spread out across the top of cucumbers and eggs.
4.Take two pieces of cooled off fresh cooked Wright Brand Bacon and spread over top of salad. This is our favorite bacon due to thickness in cut and flavor. Try Wright Brand or use your preferred brand. 🥓
5. Take your Grilled Chicken and cut it up into bite size chunks and spread it out over the top.
6. Take a few of your left over cucumbers and spread them out on top.
7. Sprinkle Kinder’s Premium Quality Seasoning Lemon Pepper on the top and then pour Olive Garden Signature Italian Dressing to taste over the salad. Toss salad briefly before eating. This allows the avocado and egg to add a little extra creamy flavor to the dressing.
*You can double or triple the recipe accordingly…make extra bacon for those notorious family nibblers!

Easy Last Minute Super Bowl Recipe - Chex Party Mix


Ingredients:
3 Cups of Corn Chex Cereal
3 Cups of Rice Chex Cereal
3 Cups of Wheat Chex Cereal
1 Chex Party Mix Seasoning Packet
6 Tablespoons of Butter 🧈
1 Cup of Mixed Nuts 🥜
1 Cup of Pretzels 🥨
1 Cup of Garlic-Flavored Bite-Size Bagel Chips or Regular-Size Bagel Chips, Broken into 1-inch Pieces

Directions:
Heat Oven to 250 Degrees
Melt Butter in Large Bowl
Pour season Packet into melted butter and stir until well mixed.
Add all other dry ingredients together and gradually mix into butter seasoning mix until well coated.
Spread Party Mix out evenly across baking pan and bake for 1 Hour while stirring the party mix every 15 minutes.
Spread out on paper towels to cool.

Notes:
*Our family uses unsalted butter to make it a little more healthy.
*We place pecans, almonds, and walnuts in due to peanut allergies so all our guest can enjoy.
*We use Honey Nut Chex instead of Wheat Chex to make it gluten-free. We also use Gluten-free Pretzels instead of Bagel Chips. To do that we just add extra pretzels in place of the bagel chips when making the Party Mix Gluten-free.
*Our guest enjoy this so much we always double the recipe.
