Garlic Shrimp Tapa in Madrid - Gambas al ajillo
🚨 Must Try Tapa Alert! 🚨 These sizzling garlic shrimp are one of Madrid's most iconic tapas. The legend goes that during the food shortages following the Spanish Civil War, tiny shrimp were one of the only foods that were cheap and plentiful. To make these little shrimp tapa-worthy, a now infamous tapas bar, Casa del Abuelo, filled a clay dish with olive oil, garlic and a cayenne pepper.
Once that flavor bomb was sizzling, they scooped in heaps of tiny shrimp and served the bubbling dish immediately, letting the shrimp cook as they traveled from the stove to table! Nowadays you can find gambas al ajillo on tapas menus across the city!
