LA LISTE PASTRY AWARDS 2024 - Pastry Openings of the Year

Christophe Louie, the undisputed king of Italian baking in Paris, opened his Haut-Marais shop dedicated to the wonder of Panettone in late 2023, making it a true first for the French capital.

Louie trained as a pastry chef, working at La Grande Épicerie de Paris, Le Meurice, and Le Jules Verne before turning his attention to the magic of bread and training with Mauro Morandin in Italy.

He was so inspired by Morandin that he named his own sourdough leaven ‘Mauro’, and brought it back to Paris to reinterpret the Italian classics of Panettone, Focaccia, Pandoro, and Colombe. His Panettone flavors include classic, Gianduja, and orange blossom; Pandoro comes in vanilla and chestnut honey.

Louie also has a focus on specialist breads made with sourdough and ancient grains, exquisite viennoiserie, classic cakes such as financiers, madeleines, flan, and marble cake, along with savouries such as pizza and sandwiches. Viva Italia!

LA LISTE PASTRY AWARDS 2024 - Pastry Openings of the Year.

Mietta by Rosemary, Rosemary Andrews, Melbourne, Australia.

Melbourne’s Rosemary Andrews, a former head chef at Ben Shewry’s Attica Summer Camp where her dessert trolley became legendary, gives cakes their true value by displaying them like fine jewellery or a sought-after handbag, on brass plinths and under glass cloches.

Her fans were ready to feast and willing to queue as soon as the much-feted Chef opened her first shop, Mietta by Rosemary, which means ‘sweet little thing’ in late 2023, and the crowds turn out every weekend to try and snaffle a slice of eight-layer Carrot Cake Dreams, seven-layer OG Honey-Misu, two-texture Valrhona Chocolate Cake, or Negroni Chocolate Tart.
Can you take any more layers? Andrews’ covetable Guinness Chocolate Cake has 16! She began baking at home as a teenager and has worked in London with Gordon Ramsay, and at Dinner by Heston Blumenthal and The Ledbury, before finding her niche in Melbourne during the pandemic with her dessert box business.

Paradise destination - North Island in the stunning Seychelles unites two of La Liste’s favorite things - a blast of tropical sun, and a remote exclusive escape.

Dig into their juicy Bresse chicken leg, stuffed with breast meat, crispy skin, and braised Romaine lettuce. It comes with rich chicken jus, rice gratin, and a chicken liver ‘gâteau’.

Prefer fish? You’ll love their perfectly steamed John Dory with smooth mousseline and lightly grilled green beans.

The morning following the La Liste Garden Party, the ambiance shifted to a delightful 100% female breakfast hosted by La Liste team and Narae Kim, pastry chef at Park Hyatt Paris - Vendôme.

La Liste is committed to promote diversity and gender parity. It was a moment dedicated to empowering women, filled with inspiring stories.

13 talented pastry female chefs, hailing from twelve different countries, gathered to share their journeys and secrets to success. Each chef brought a unique perspective, enriching the morning with diverse culinary tales and experiences.

Chef Narae Kim and an all female pastry team curated a special sharing breakfast menu. From freshly baked homemade pastries to vibrant seasonal acai bowls, every dish was crafted with care, celebrating both the artistry and unity among women in the culinary world.

We’re still soaking in the delicious wonderland of La Liste Garden Party 2024!

Guests indulged in incredible sweet buffets and cocktails all evening long.

Jessica Prealpato wowed everyone with her ultimate Rhubarbe dessert, specifically sourced from Mathieu and Valentin Vermès, adding her unique twist with herbs and pines.

Arnaud Larher teamed up with Cacao Barry to present a mouthwatering buffet, featuring treats from Passion Fruit to Strawberry delights paired with the best chocolates.

Ramon Morató, Cacao Barry’s global creative director, held a special book signing session for « The Alphabet Cacao Barry, » delighting all the chocolate lovers in attendance.

Chandon offered the perfect Summer sparkling cocktail to keep the best atmosphere among guests.

And for our cigar aficionados, Casa Pelletier prepared a top-notch cigar lounge, offering a curated selection of premium ci**rs.

Highlights from La Liste Garden Party 2024 - A feast of sweet delights.

We’re still buzzing from the delicious wonderland at La Liste Garden Party 2024! Guests were treated to incredible sweet buffets crafted by an all-star lineup of pastry chefs.

Maison Pierre Hermé kicked things off with stunning macaron towers featuring iconic flavors like Mogador (Passion Fruit and Milk Chocolate), Orange, Basil Flower, and Rose, Lychee & Raspberry. Many more sweet treasures were offered to guests, including the frozen MissGlagla and the newly launched Infiniment Chocolat range.

Right next door, Canadian pastry chef Flora Davies from Le Biscuit Alain Ducasse Manufacture worked her magic with buttery palets. They were paired with Alain Ducasse Café Manufacture to embark on a very special sensory and gustatory journey.

Yann Brys from Parisian Tourbillon pastry shop wowed everyone with an irresistible vanilla tasting with Prova Gourmet and presented his famous Vanilla Eclat, with Organic & Sustainable Vanilla from Madagascar.

Meanwhile, Julien Dugourd and his team brought deliciousness with his sophisticated signature desserts lemon Signature and Ocean, both in collaboration with unique moulds from Silikomart.

Keeping the vibes high, cocktails and drinks by Maison Villevert flowed all night, fueling the party’s lively atmosphere.

Not into alcohol? No problem! Eplem had you covered with their delightful fermentated sodas (Fruit Kefir, Kombucha) for a tasty non-alcoholic option.

Highlights from La Liste Garden Party 2024 - An all female chef team leading the savory menu. 👩🏻‍🍳

In the exclusive Parisian gardens with the iconic golden dome gracing the skyline, the cocktail reception dazzled with savory buffets crafted by three exceptional female chefs. Guests were treated to unexpected and delightful flavors.

Émeline Aubry delighted everyone with three types of savory pâté en croûte, showcasing the best produce from Normandy including blood sausage, andouille, and tripes.

Just next to her,  an alternative plant-based option and bestseller at uprising Faubourg Daimant, Alice Tuyet presented her vegan croquettes .

And last but certainly not least, Beatrize’s tacos stole the show. Her team infused the party with vibrant Mexican energy, crafting fresh tortillas à la minute, filling them with either Cochon confit, beef or vegetarian option, all complemented with a variety of, all the taco lovers. 

Asia is always close to La Liste’s heart. Paris Store offered a taste of Asia with a variety of dishes from nems to frozen mocchis. 

The savory delights were complemented by exceptional wines: organic Burgundy wines from Domaine MIA, traditional Languedoc grape varieties from Château Pech-Latt, and Slovenian wines by Marjan Simčič.

First highlights of La Liste International pastry forum - Pastry champions and leaders were on stage for unforgettable moments.

The event started with exciting conference series - OpenTalks. Honored speaker Pierre Hermé delved into the impact and growing potential of haute pâtisserie in luxury hospitality with François Delahaye and award winner Christophe Devoille.

US-based chefs Dominique Ansel and Antonio Bachour shared insights on developing successful models while navigating different cultures.

Avant-garde pastry chefs such as Nina Métayer, Ramon Moratò, and award-winning Bastien Blanc-Tailleur engaged in discussions about the captivating integration of creativity and AI, influencing the future of pastry. Moderator Morgane Soulier surprised the audience with AI-generated pastry creations and discussed the creative process with each of them.

After these captivating discussions, Philippe Faure, President of La Liste, launched the prestigious award ceremony, with Guillaume Gomez, Ambassador of Gastronomy, Personal Representative of the French President, adding heartfelt words about the pride of hosting such international pastry community in Paris.

From Melbourne to Lima, Singapore to New York, pastry champions came to receive their award on stage.

Each award recipient was met with enthusiastic applause, celebrating their dedication, innovation, and remarkable achievements.

Notable moments included Ramon Morató presenting an award to Bastien Blanc Tailleur and the touching scenes with Pierre Hermé alongside the Cerea and Bernachon families.

The ceremony, hosted by La Liste Managing Director , concluded with a memorable group photo in the exclusive garden of the Invalides.

Tea time or “Goûter à la française”?

To celebrate Parisian San Régis Hotel’s 100th anniversary, renowned pastry chef Jessica Préalpato, has been invited to craft the ultimate “Goûter à la française”.

Formerly of Plaza Athénée, Jessica Préalpato has created a bold and personal six-part afternoon treat, fostering a sense of conviviality, never compromising on her ingredient sourcing. This is the Goûter à la Jessica!

Growing up with pastry chef parents, Jessica Préalpato was immersed in a sugary world from a young age. Following in the footsteps of Alain Ducasse, she prefers to highlight raw ingredients and minimize sugar to bring out more authentic flavors in her desserts. This concept is explored in her cookbook « Desseralité, » published by Alain Ducasse Editions, where she presents 45 unique and extraordinary creations.

The journey at San Regis begins with a custom infusion created with Maison Parisienne des 88 Thés, designed to complement each step of the tea service.

Next, comes an array of cookies reminding of the joy of opening a box of childhood favorites—a delightful experience for all, including the chef herself. This playful mix of flavors, shapes, and textures, paired with appetizing condiments, is sure to whet the appetite.

The feast continues with cereal and black pepper choux pastries, followed by a fig tart from Yannick Colombié, enhanced with green cardamom and fresh almonds — a nod to the Lebanese heritage of the Georges sisters.

Préalpato’s treats mix modern flair with nature’s best flavors, letting each ingredient shine. Her fun, inventive pastries bring a fresh twist to childhood favorites.

Countdown to OpenTalks and La Liste’s first International Pastry Forum. 🎙️

Global pastry champions are awaited at our upcoming Summer feast, set to take place in Paris on Monday, June 17th, just a few weeks ahead of the Olympics.

OpenTalks is the La Liste’s conference concept, gathers chef speakers and experts to discuss emerging trends and share their experiences. A captivating session dedicated to pastry is under preparation and we cannot wait to share one of the three themes: « Pastry creativity & Artificial Intelligence »

Allies or enemies? Three avant-garde and passionate personalities will share their personal creative processes and discuss the infinite possibilities of AI: Nina Métayer, the multi-awarded pastry chef of La Délicatisserie; Bastien Blanc-Tailleur, the star of edible haute-couture wedding cakes; and Ramon Morató, Cacao Barry’s global creative director.

The panel will be moderated by Morgane Soulier, a conference speaker, consultant, expert in digital and AI and also the author of « Metaverse, comprendre le monde qui vient. »

Artificial Intelligence (AI) is revolutionizing pastry creativity, particularly in design and aesthetics. By analyzing vast amounts of visual data, AI inspires intricate patterns, stunning effects, and harmonious color palettes. A Mexican Dream in Paris 🇲🇽🌮

Beatriz Gonzales recently opened Taco Mesa in Paris and will join the team at the La Liste Garden Party next Monday.

Known for her vibrant, generous, and excellent culinary skills, Beatriz Gonzalez is the chef behind Neva Cuisine and Coretta, two beloved Parisian restaurants. She had long dreamed of opening a Mexican restaurant, and the pandemic provided the perfect opportunity to turn her dream into reality: after the success of delivering tacos during lockdown, she’s opened a taquería in Paris to introduce the iconic Mexican taco to the city.

Beatriz’s journey to becoming a chef was deeply influenced by her mother’s cooking. Originally from Mexico, she didn’t initially plan on a culinary career, but the flavors of her childhood and her determination to succeed led her to this path.

At Taco Mesa, Beatriz brings joy to diners with her energetic personality and Mexican-inspired cuisine.

Check her tantalizing selection of tacos: Cochinita Pibil (slow-roasted pork), Cochon Confit (confit pork), Al Pastor (spit-grilled pork), Cochon à la Broche (spit-roasted pork), Birria de Res (braised beef), and a not to forget vegetarian option, Vegetariano. These tacos are served with your choice of salsa: salsa verde, extra roja, or mango. You can also enjoy quesadillas with chipotle (smoked pepper) or gringa (spit-roasted pork).

To complement her savory dishes, Beatriz offers churros and arroz con leche (rice pudding).

Emeline Aubry’s journey is nothing short of extraordinary. Her story is as epic as her paté en croûte specialties.

Who would have imagined that a DJ of Latin music would be the only female finalist at the Pâté en Croûte World Championship contender.

Trained by Amandine Chaignot and Yannick Alléno, her love for cuisine blossomed during a globe-trotting street food adventure. The pandemic ignited her passion for pâté en croûte, taking her to the 2021 finals.

10 Years of Culinary Brilliance ✨

On May 29, 2024, Chef Yannick Alléno celebrated his arrival at Pavillon Ledoyen and the inauguration of his multi-awarded fine dining restaurant, Alléno-Paris with a historic menu crafted exclusively for lucky guests and friends.

Built in the Champs-Elysées’ gardens in 1842 by the renowned architect Jacques- Ignace Hittorff, the neo-classic building holds its name from Doyen, the restaurant owner who made his prestige from 1792. In more than two centuries of history this iconic place has become a temple of gastronomy always affirming a typically French savoir-faire.

Since his arrival in 2014, chef Yannick Alléno has been working on the Pavillon Ledoyen’s renaissance always looking at the future, including contemporary art installations - like the monumental Masmonteil piece of art in the main staircase - a futuristic kitchen designed by DS Automobiles designer and a recent unique avant-garde extended chef table.

Recognizing a decade of success at Pavillon Ledoyen, this distinguished event showcased Chef Alléno’s culinary expertise.

As an honored guest and historical heritage journalists, Stéphane Bern accepted to preside over this grand dinner, sharing selected anecdotes about the Pavillon Ledoyen and the menu served.

Guests enjoyed refined starters such as ‘Froufrou’ egg with Oscietra caviar, ‘Jolies demoiselles’ Guilvinec langoustines, complemented by a vibrant green herb sauce followed by a flavorful Chateaubriand of Wagyu beef, served with a rich Solferino sauce and crispy matchstick potatoes. For dessert, a delectable rum-soaked savarin with whipped cream and powdered sugar provided a fitting conclusion.

The event epitomized the fusion of culinary excellence and historical significance, offering guests a unique glimpse into the legacy of Pavillon Ledoyen through Chef Alléno’s innovative approach.

Alice & her team ensure every visit is unforgettable: bourgeois classics become playful and noe- modern like bouillabaisse, stuffed cabbage, and the iconic ‘croquette cochonne’, celebrating vegetables in all their glory.
