Hawaiian Grilled Teriyaki Chicken
Ingredients
1 1/2 lbs of boneless, skinless chicken thighs
1 cup of soy sauce
1 cup of packed brown sugar
1 cup of pineapple juice
4 cloves of chopped garlic
1 tbsp of freshly minced ginger
Instructions
Put the chicken thighs in a bowl or a large resealable plastic bag.
In a medium-sized mixing bowl, mix together the remaining ingredients until the sugar has dissolved.
Pour the marinade over the chicken and either seal the bag or cover the bowl.
Refrigerate the chicken and marinade overnight or for at least 4 hours.
Remove the chicken from the bag and set aside, reserving the marinade.
In a medium saucepan, bring the marinade to a simmer and let it cook for 5-10 minutes.
Place the chicken on the grill and brush some of the hot marinade over it, but do not reuse the brush for the marinade.
Cook the chicken until it reaches an internal temperature of 165°F.
Transfer the cooked chicken to a baking dish and pour the remaining hot teriyaki marinade over it. Serve immediately.
