If was fun brewing through the advent calendar from 19grams and now I’ll start to mix and blend the remaining beans from each day for a little additional fun. If you’re curious I have a highlight on my Instagram showing each daily coffee.
One of the main issues or complaints about a Chemex or Chemex-style brewer is that the filter can fall into the spout while brewing. The spout is obviously for pouring after brewing, but it also serves as a very important air gap during brewing. If the filter falls into this gap fully, it can actually seal it off and cause the brewing to stop, or at the very least slow down. This can lead to over extracted or bitter coffee.
There are lots of things you can do, but I find there are two easy and simple ones you can.
1. Don’t fill as much as you are pouring. Do more smaller pours to keep the overall volume down rather than only a few bigger pours. So, instead of pouring 700g total in two pours, so it in three or four pours.
2. If the filter falls, do a little pop or straightening of the filter and then a little twist of the entire filter like I did in the video.
Simple, easy, and delicious Chai latte at home.
Most every coffee shop, especially the chain shops, use a liquid chai concentrate that you can buy almost anywhere (Target, Costco, grocery store, etc). Then they add steamed milk and in the case of SBUX, they also add hot water. That’s it. That’s the drink you are paying a premium for.
If you are lucky, your local shops might make their own Chai by steeping actual tea and spices. Whisk & Arrow in Appleton makes their own concentrate, bottles it, and sells it for you to use at home!
I love using my little old milk frother for drinks like this. You can find a wide variety of these ranging from about $25 all the up to about $80. They are a great little tool to have at home because they heat and froth. If you don’t want one of these, you can gently heat your milk on the stove top. You can use a French press or a little stick wand to froth it or just use it as is.
My wife likes to add a shot of espresso to her Chai, so when I make it at home I sprinkle in a little bit of instant coffee.
I mostly do brewed or filter coffee at home, but I do like the occasional afternoon latte and for that, my Flair (a manual espresso “machine”) is perfect. I don’t use it as often as I should, so today I bust it out for a little Oat Milk Nog Latte. It was delicious.
Manual espresso machines are quite similar to their electric counterparts in terms of grinding and puck prep. The main difference is that you supply the hot water and pressure rather than having the machine do it. Here’s a little video of me pulling a shot, put to music for the heck of it. That’s it. That’s all I got today.

Let’s all agree to skip the sbux gift cards this year and focus on the local cafes instead. I promise you the corporate coffee shops don’t need your money, but the local ones do.
It’s National Coffee Day.
I know it’s tempting to go get a free cup from some of the big Chains stores, but instead, how about you find a nice local shop and treat yourself to a nice cup. One of the local shops here (Bedrock Coffee Roasters) was offering a buy one get one deal so I went and did that (brought my own mugs of course).
Even if you don’t have time to go get a cup of coffee, maybe just take a moment and savor a sip or two of the one you have already (I just assume everyone has a cup of coffee. That’s right, right?)

Take your coffee drinks outside
Should be real nice weather this Holiday weekend. Here’s a reminder to take your coffee drinks outside every once and a while.
This one was really simple and can be done without much effort at all. I brewed up 4oz of ”Specialty Coffee” on my Mother in Law’s Ninja coffee brewer (its a setting 🤷🏻♂️). I believe it is meant to be like an espresso strength drink to mix with milk. Here I poured it in a San Pellegrino Limonata (basically a lemon soda).
