Brine Country is a Sonoma County based start-up business focused on all aspects of fermented food and drink. We offer our line of KimKraut (A KimChi -Sauerkraut Fusion) and we aim to support the do-it-yourselfer with tools, equipment, a variety of fermentation classes, plus farm and fermentation tours.

If anyone is looking for Kimkraut there is a sale going on with the last of our current stock. Production is suspended currently due to loosing our fermentation space and other production challenges. Send us a message if you would like to have Outrageous Original, Carrot Caraway, or Genuine Ginger while they last.

Hope all is well for your family! Brine Country would like to let you know we have Kimkraut available for Thanksgiving. Kimkraut is great as an alternative to gravy for your turkey and is delicious in mashed potatoes, or in a salad, and of course as part of the appetizer mix with cheese and on crackers. We are excited about this new year and the possibilities ahead. It's a slow process to build a business and learn the ropes of fatherhood at the same time. Thank you for all your support and patience!! Soon KimKraut will be available at stores and we'll be announcing our market plan, etc. In the meantime if you want Outrageous Original or Mostly Mild we could arrange to meet or you could stop by the kitchen in Windsor. Looking for a creative Thanksgiving dish? Try this recipe and add your favorite KimKraut in place of KimChi. We recommend Mostly Mild or Outrageous Original. Mumm, mumm good :)

Kimchi, the fermented cabbage so familiar on the Korean table, takes on American mashed potatoes in this twist on the typical Thanksgiving recipe from cookbook author and restaurateur Debbie Lee. And she throws in Fuji Apple Egg Rolls for dessert.

Hey Ya'll - Wanted to let you know that Brine Country will now be doing the West End Farmers Market in Santa Rosa on the 2nd and 4th Sunday's of the month. So we'll be there this Sunday/today, Sept. 14th. Soon, we'll be doing the Saturday Petaluma and Calistoga Farmers Markets too. Starting in October. Check back for details. Thanks!!

This is such a great article I have to re-post it again!! If you missed this NYT Magazine article by Michael Pollen then you are in for a treat. Lots of amazing news!

When you're done reading you'll find - "We know all we need to know, in other words, to begin, with modesty, to tend the unruly garden within."

Let's tend that "unruly garden within" together with KimKraut. It's is right in line when you see Sauerkraut and Kimchi in the mix.
