Elegant White Chocolate Blueberry Swirl Cheesecake

Ingredients:

Crust:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
Cheesecake Filling:

24 oz (3 packages) cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1 cup white chocolate, melted
1/2 cup sour cream
Blueberry Swirl:

1 cup fresh or frozen blueberries
1/4 cup granulated sugar
1 tbsp lemon juice
1 tbsp cornstarch mixed with 2 tbsp water
Topping:

Whipped cream
Fresh blueberries
Directions:

Prepare the Crust:
1️ Preheat your oven to 325°F (163°C).
2️ In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
3️ Press the mixture into the bottom of a 9-inch springform pan.
4️ Bake for 10 minutes, then set aside to cool.

Make the Blueberry Swirl:
1️ In a small saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until the berries release their juices, about 5 minutes.
2️ Stir in the cornstarch mixture and cook until thickened, about 2 more minutes.
3️ Remove from heat and let cool completely.

Prepare the Cheesecake Filling:
1️ In a large bowl, beat the cream cheese and sugar until smooth.
2️ Add vanilla extract and eggs, one at a time, beating well after each addition.
3️ Mix in the melted white chocolate and sour cream until smooth.

Assemble the Cheesecake:
1️ Pour half of the cheesecake filling over the cooled crust.
2️ Dollop half of the blueberry sauce over the filling and use a knife to swirl it gently.
3️ Repeat with the remaining cheesecake filling and blueberry sauce, creating a swirl pattern on top.
4️ Bake for 55-65 minutes, or until the center is almost set. The center should still jiggle slightly.
5️ Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
6️ Remove from the oven and let it cool completely at room temperature before refrigerating for at least 4 hours or overnight.

This October marks the 90th anniversary of Bowman's Hill Wildflower Preserve's founding in 1934! In celebration and reflection, we are looking back on the history that brought us here and the future we strive to reach. We have come so far as an organization and a community because of the support from board members, visitors, staff, volunteers, members, students and everyone who sees the unique potential of this growing, living museum. You have made these past 90 years possible, and it’s with you we will reach beyond the next 90.

Covering the Centraila Highway in Columbia County was one of the biggest mistakes ever made in Pennsylvania history.

Closed in 1993, because of the decades long minefire beneath the town, this .74 mile stretch of road was covered with lots of colorful art, quotes of wisdom and people would come from all over to see to see it and learn about the minefire its history. It gave eerie vibes but also drew much interest and was the creative source for books and screenplays.

By 2017 some sources believed it was unofficially the 6th most visited tourist attraction in PA.

It was turned over to a private company and now all that remains is dirt piled high on everything including the entrance. What could have been an amazing attraction is now just another footnote in Pennsylvania history. Tragic.

Lightning bugs are a magical part of summer. But that magic is fading... many species are endangered. It's believed that light pollution, human development/habitat loss, overuse of pesticides and climate change are to blame. So, let's all do our part to preserve these amazing little creatures!

1. Turn off outdoor lights and close blinds or curtains at night. Light pollution affects mating. If you must have an outdoor light, consider a motion activated light or a warm-colored LED bulb/bug lite bulb.

2. Leave the logs. Some firefly larvae need rotten logs and other tree litter.

3. Add a water feature such as a small fountain or pond. Fireflies thrive around water. Treated swimming pools don't count. Lightning bugs feed off smaller insects and snails that do not exist around chlorinated water.

4. Avoid lawn chemicals and pesticides: these affect firefly larvae and the insects they eat. Fireflies consume pesty insects, so by protecting fireflies, we reduce pests.

5. Mow less: Lightning bugs spend their days in the grass and frequent mowing may disrupts the population. Consider creating a small prairie or section of long native grasses into your landscape.

6. Plant native trees. Pines are especially beneficial to fireflies.
