Staff shout-out to (Tenaya Darlington) who you read about in our newsletter this week! Tenaya is the author of 7 books, and she’s sometimes called the “OG Cheese Blogger” for her blog “Madame Fromage,“ which she started in 2009. Since we launched Cheese Journeys a decade ago, Tenaya has served as a cheese educator. Here are a few things guests enjoy with Tenaya:

Meet our : Appleby’s Cheshire, a traditional farmhouse cheese from England produced by Paul & Sarah Appleby at their farm on the Cheshire Plains. Mild and delicate, this golden beauty is a favorite on our British Cheese Odyssey where guests often enjoy it for breakfast. It pairs wonderfully with buttered toast, black tea, and any kind of fruit. It’s also terrific with hard cider.

Much like some English Cheddars, Cheshire is a clothbound cheese. After wheels are formed, they’re wrapped in cloth, then aged for 12 weeks. At one time, Cheshire was a wildly popular cheese in England, but it disappeared during wartime when cheesemaking moved from farms to factories. Today, few people still make it.

The Applebys produce this cheese in small batches following the recipe of Paul’s mother Lucy, who descended from a long line of Cheshire makers. Using grass-fed raw milk from their own herd and a touch of natural annatto for color, the Applebys are renowned for quality and for keeping this iconic cheese in production.

Hearing their story is something you can experience on our British Cheese Odyssey in fall. Paul and Sarah always join us for a night at the manor house to describe their cheesemaking process and to share delicious slices. It’s part of our British Cheesemakers Celebration, a gala dinner attended by makers from around the country.

Say hello to Tête de Moine – the “Flower Cheese” of Switzerland! It’s our this week, and trust us, it’s not just a cheese—it’s a cheese experience. Known for its unique rosettes, Tête de Moine looks like something out of a cheese lover’s dream.

How does it do that? Enter the Girolle, a special cheese curler that turns this cylindrical beauty into delicate, petal-thin shavings. Just set the Girolle on top, give it a clockwise spin, and voilà—you’ve got yourself some perfectly shaped mini carnations...or maybe snowflakes? (Swipe for a peek at the magic in action!)

Pop one of those shavings onto your tongue, and it melts away in seconds, releasing the bold, funky flavor that has been a Swiss tradition for centuries.

Fun fact: Tête de Moine has been around since the 12th century when it was first crafted by monks at the Bellelay Abbey in the Jura Mountains. The name Tête de Moine literally translates to “monk’s head” (no, really!). Today, this PDO cheese is still made by select Swiss creameries, keeping the alpine cheese tradition alive.

So, next time you’re hosting a get-together, grab a wheel of Tête de Moine, let your guests take turns creating rosettes, and pair it with a monastic brew for an authentic experience that’s as fun as it is tasty.

Meet Gouda, our this week! Named after the village of Gouda in South Holland – once a Dutch cheese trading center – Gouda is a cheese style that dates back to at least the 12th century. The recipe involves a unique step of washing the curds with hot water, which results in a sweet, nutty cheese that ages well.

On long sea voyages, sailors nibbled Gouda for protein, and because the Dutch also traded spices, exotic flavors found their way into the wheels. Cumin. Fenugreek. Mustard seeds. Even whole cloves.

Enter a Dutch cheese shop today, and you’ll still find a huge variety of spiced Goudas, along with wheels of different ages. Like wines, Goudas only get more complex with time.

Try pairing an aged Gouda with Madeira or sherry this winter, alongside roasted nuts, dried figs, and dark chocolate. A toffee-like aged Gouda is one of our favorite after-dinner selections on a dessert board.

Meet Pitchfork Cheddar, our this week. If you heard about the recent “cheese heist” in London where £300,000 worth of Cheddar was stolen, Pitchfork was one of the three coveted Cheddars that disappeared!

What makes Pitchfork so valuable?

This artisan Cheddar is made in Somerset England – the seat of great English Cheddar – and it’s produced by a pair of brothers, Todd and Maugan Trethowan, who are considered phenoms in the UK cheese world. They made their names producing a traditional cheese in Wales, called Gorwydd Caerphilly. When they moved their operation to England, near the village of Cheddar, they felt inspired to produce a traditional English cheese. They hired a cheesemaker, Ben Ticehurst, to help them, and by 2019, Pitchfork was stealing awards!

In fact, Pitchfork won a World Cheese Award and was inducted into Slow Food’s Artisan Somerset Cheddar Presidium, a status given to only four Cheddars!

The name “Pitchfork” refers to a Cheddar-making tool that is traditionally used to toss the curds as they are being salted. Like other famous Cheddars produced in Somerset, Pitchfork is made from fresh raw milk, then the curds are run through a mill (similar to a sausage grinder) to produce a textured crumb. Each drum is then wrapped in cloth before it heads into the cave for 12 months.

Nuanced and buttery, this award-winning cheese has garnered many fans on our British Cheese Odyssey, which we host in Somerset every fall. Curious to taste it? Come on a tour! But first, look for Pitchfork Cheddar at your local cheese counter; when you take a bite, know that you are tasting what Brits call “a proper old-fashioned English Cheddar.”
