Meet Pitchfork Cheddar, our this week. If you heard about the recent “cheese heist” in London where £300,000 worth of Cheddar was stolen, Pitchfork was one of the three coveted Cheddars that disappeared!

What makes Pitchfork so valuable?

This artisan Cheddar is made in Somerset England – the seat of great English Cheddar – and it’s produced by a pair of brothers, Todd and Maugan Trethowan, who are considered phenoms in the UK cheese world. They made their names producing a traditional cheese in Wales, called Gorwydd Caerphilly. When they moved their operation to England, near the village of Cheddar, they felt inspired to produce a traditional English cheese. They hired a cheesemaker, Ben Ticehurst, to help them, and by 2019, Pitchfork was stealing awards!

In fact, Pitchfork won a World Cheese Award and was inducted into Slow Food’s Artisan Somerset Cheddar Presidium, a status given to only four Cheddars!

The name “Pitchfork” refers to a Cheddar-making tool that is traditionally used to toss the curds as they are being salted. Like other famous Cheddars produced in Somerset, Pitchfork is made from fresh raw milk, then the curds are run through a mill (similar to a sausage grinder) to produce a textured crumb. Each drum is then wrapped in cloth before it heads into the cave for 12 months.

Nuanced and buttery, this award-winning cheese has garnered many fans on our British Cheese Odyssey, which we host in Somerset every fall. Curious to taste it? Come on a tour! But first, look for Pitchfork Cheddar at your local cheese counter; when you take a bite, know that you are tasting what Brits call “a proper old-fashioned English Cheddar.”

Meet Le Gruyère, this week’s . If you followed our Cheese Journey to France & Switzerland this fall, you probably saw us visit Fritzenhaus Dairy (.fritzenhaus) — the world’s premier producer of Le Gruyère. Cheesemaker Michael Spycher has won the World Cheese Championship Contest four times, including in 2024!

Want to taste this cheese? It’s distributed to the U.S. by , which works with small village dairies in the mountains of Switzerland.

Keep in mind that only certified artisans in Switzerland can produce Le Gruyère, which has a Protection Designation of Origin (PDO). Any cheese simply labeled “Gruyère” is an approximation of the traditional Swiss recipe.

When you taste ’s Le Gruyère, you’re tasting artisanal small-batch Gruyère made from the raw milk of cows that have grazed on Alpine pasture. We got to waltz around those meadows, meet the ladies, and taste wheels straight from the aging cave. The depth of flavor was incredible – nutty, herbaceous, carameline.

Although we love melting Le Gruyère on sandwiches and in fondue, we adore it most as a table cheese. Try it on a charcuterie board with cured meat, grainy mustard, whole roasted garlic, dried fruit, and rosemary bread.

We can’t wait to return to Switzerland again next fall – to eat more Le Gruyère in the Alps and to participate in another cow parade! In the meantime, let us know if you find this special wheel stateside. We’ve already spotted this prize winner at a few counters!

We’re in Burgundy this week, home to this glowing medallion – our – so we thought we’d share some tips for exploring this gorgeously gooey cheese.

If you’ve met Epoisses, you no doubt remember its aroma. Bathed with Marc de Bourgogne, the scent of this washed-rind cheese has been compared to sweaty socks, though we prefer to compare it to beef stew. After all, the monks who invented this style fell hard for it because washed rinds reminded them of eating meat — a treat that was prohibited from abbey menus, due to the vow of poverty.

This is why we often recommend serving Époisses as the centerpiece of a meatless meal. Let it come to room temperature, peel back the top rind, and serve it with steamed veggies (potatoes and cauliflower) and an assortment of pickles, like pearl onions and cornichons. A glass of white Burgundy is excellent alongside.

For a sweet pairing, try setting out a room temp Époisses with sliced pears, dried fruit or fruited bread, and a bowl of nuts in their shells. A great dessert wine, like Sauternes, or a full-bodied Burgundy Pinot Noir will make this unforgettable cheese even more unforgettable.
