To make: wash your sweet potato and poke a few holes in the skin to help it steam and cook faster. Once done, slice the sweet potato halfway through and layer on your toppings. Gabi uses: Abbot’s “Chorizo”, guac, coconut yogurt or vegan sour cream, lettuce, and a drizzle of your favorite dressing.

It’s soup season and we can’t wait to make this Smoky Bell Pepper Soup from @sncxkitchen.
Ingredients:
½ – 1 tbsp EVOO
125 gm / 4.5 oz finely diced onion
425 gm / 15 oz diced bell pepper
3 garlic cloves, finely minced
Abbot’s “Chorizo”
½ tsp smoked paprika
½ tsp ground turmeric
½ tsp oregano
½ tsp thyme
½ tsp basil
½ tsp rosemary
½ tsp oregano
1 can - 14.5 oz organic diced fire roasted tomatoes (no salt)
1 can - 15 oz organic tomato sauce
2 tsp organic seasoned vegetable base @betterthanbouillon + 4 cups water
½ cup cooked quinoa
1 pack organic white jasmine & forbidden rice pouch @lotusfoods
Salt & pepper to taste
Chopped parsley, for garnish
Directions:
Follow the sequence in the video.
Simmer until the rice is tender.
Adjust the consistency of the soup by adding water according to preference. Reseason the soup with more salt if preferred.
Serve immediately. Garnish with chopped parsley if preferred.
