- Granulated Sugar: ½ cup + 1 tbsp

- Eggs: 3 large

- Applesauce: 2 tbsp

- Mashed Bananas: 1.05 cups

- Chopped Nuts (unsalted): 1 cup

- Flour: 1 and 1/4 cups

- Baking Powder: 4 tsp

-Salt: A pinch

- Nonstick Cooking Spray

Directions:

1. Start Creamy: In a mixer, cream together shortening and sugar on medium speed until light and fluffy (about 2 mins).

2. Eggs & Applesauce: Add eggs and applesauce, mixing for another minute.

3. Go Bananas: Stir in mashed bananas and nuts until well blended.

4. Dry Ingredients: Sift flour, baking powder, and salt together.

5. Mix It Up: Gently mix dry ingredients into the banana mixture. Beat on low for about 1 minute. Remember, don’t over-mix!

6. Prepare: Spray a loaf pan with nonstick spray and pour in the batter.

7. Bake It: Bake at 325°F in a preheated convection oven for 55-65 mins or until a toothpick comes out clean.

8. Cool Down: Let it cool in the pan for 5 mins, then transfer to a wire rack to cool completely.

Tip: For extra moistness, prepare the day before and refrigerate overnight!

The Aloha Stadium Swap Meet or Aloha Flea Market, is best described as a Hawaiiana shopping spectacle, that’s both entertaining and overwhelming at the same time.
