So today I was out-banana-caked by my friend when a few of us garden lovers met up to wander through her lovely garden then stopped for homemade cake and a cuppa.
We were watched either by two curious wallabies - or one who followed us around the property 🦘 👀

The other images are of her Ice Cream Bean Tree (Inga densiflora) which is a large tree with sweeping branches.

Lovely to see one in the ‘wild’.

Another tree which is potentially a w**d species in parts of Northern NSW.

The pods weren’t ripe to eat the sticky ‘ice cream’ layer surrounding the seeds.

Have you eaten it?

Too big to grow one in my garden with its spreading branches, definitely a tree for acreage.

A bar playing live jazz in Coffs Harbour?
There’s a new mood in the neighbourhood and I’m there!

In 2024 before it became Stef & Co, I hosted my 3rd Coffs Coast Long in this venue overlooking our stunning Coffs Creek - a stunning green outlook alive with birds and the occasional paddle boarders.

Fast forward and this space has been renovated, jooshed up and recreated as a Stef & Co. downstairs bar.

Different nights offering different music from DJs on decks to JAZZ.... on Wednesday nights.

Wednesday JAZZ NIGHTS currently feature who play a mix of jazz tunes, with the sound levels just right, and the mood smoooooth and easy.

A nice venue to catch up with a friend or two and share a pizza and sips.

This spicy pizza was spicy and 100% on flavour.

Discovering a new fruit or veg is super exciting!
I recently found this new-to-me jewel-like ruby red fruit known as a Surinam cherry.

It’s subtropical and is native to eastern South America, and is apparently high in antioxidant and anti-inflammatory properties. Surinam cherries also contain significant amounts of vitamin C and some vitamin A.

It was thanks to the friendly folks in the local Coffs Information Facebook Group I found out that Brazilian Cherry (Pitanga) is growing in quite a few gardens on the Coffs Coast, including a neighbours’ garden.

It is considered a w**d in some areas as birds love them and help spread their seeds. The seed IS very much like a cherry pip.

Have you seen these, have you eaten them?
When they are ripe - either dark red or almost red-black - they are sweet, almost like eating a firm jelly.

Speaking of jelly, lots of people mention using them in jams - and I can imagine they’d make a delicious tasting jam.

Most likely I have, because it truly is one of the great spices - read up on its history 😉

When people talk about ‘essential’ kitchen equipment this is one of my favourites - a nutmeg mill - similar concept to a pepper mill (another essential) but with a different blade mechanism.

You might be thinking 🤔 it’s an extravagant waste of money and you’ll never use it, but once you buy nutmegs whole and start grinding you’ll think differently.

Because we all know ground nutmeg is a total waste of time, and you lose not only the fibre but those essential nutmeg oils impregnated (first time I’ve used that word) in the nut.

Is nutmeg an actual nut? It isn’t.
Nutmeg is a dried seed, not related to peanuts or tree nuts.

The scent is imo divine and it’s used to elevate (using that overused word) all types of foods from sweet to savoury.

If you’ve only experienced ground nutmeg as a tasteless dry sprinkle across the top of rice pudding I understand your disappointment.

More inspired uses of freshly ground-by-you are in curries, in cakes and so delicious worked into ground meat kebabs (in generous amounts) or chicken or vegetable meals, or anything!

Why am I telling you this? To go online and find a nutmeg grinder - yeah at $30+ they aren’t exactly cheap - but one day you’ll thank me.

Long ago nutmeg itself was insanely expensive and worn around the neck like a pendant with a tiny metal grater. That’s how highly it was (and still is) regarded.

Packets of whole nutmeg can now be found inexpensively in supermarkets.
Nutmeg is grown in the Caribbean (Grenada is the Nutmeg Island) and also China.

I hope you’ll discover or rediscover this incredible spice.

Its uses go far beyond culinary.

I’ve just grated some into my Banana Cake along with cinnamon and cardamom and my kitchen smells delicious.

It’s 29 Celcius here and hot, so only crazy and/or hungry people like myself are baking today - what are you up to?

MOST OF YOU know I also run a foodies book club in Coffs Harbour.

I’d like to highlight our next book even if you can’t attend, as it’s an Australian crowdfunding project with a great food ethic behind it. And at 250 pages it’s an easy and enlightening read.

EATING DEMOCRACY - The true cost of the food we eat.

This book is a series of stories written by people from diverse backgrounds and locations.

Some are students, others work in hospitality or the arts, are academics, or have professional careers.

Each cares about the food they consume, where they source it from, how it is grown, prepared, and eaten - just like you!

Topics include - personal food journeys, food and community, First peoples and food, food ethics, the cost of food, where our food comes from, culturally diverse food, and ideas for resilient food systems.

This book is published by Australian Food Sovereignty Alliance (AFSA) an organisation working towards socially-just and ecologically-sound food and agriculture systems that include Indigenous Peoples and local communities in decision making processes.

I have lots of reasons to love Yamba (NSW coast town) and one of them is stopping at the delightful and tiny Beachwood Cafe to eat Turkish 🇹🇷 cooked lunches including Lentil Korma, and Turkish Sardines.

The passionfruit cake was made using passionfruit from the kerbside garden which also grows raspberries, pineapple 🍍 and bananas.

Shame on whoever dug up and stole 👀 the second banana tree 🤦🏻‍♀️

I’d like to play with making a similar cake 😋 as this slice was shared.

After a hectic end of 2024, it was the first day Beachwood opened in 2025 - lucky us. 😋

This eatery is casual, unique, and they work hard to deliver food that is different and delicious.

I’ve been eating out a lot lately on my staycation (food posts to come) but it’s neat when you stay in - while away - and create a lazy grazing plate that includes homegrown produce you brought along in the esky…

Homegrown tiny tomatoes 🍅 tiny but sweet ripe figs, and a wonderful big juicy passionfruit 🥰 the largest one our vine has produced.

A nice eat in with fresh raw food between cafe visits.

They need ur help, and the Labor government has reneged on their pledge to protect koalas 🐨

I had originally decided not to post political posts here unless they were food related.

But what is left for koalas to eat?

It’s extremely important to me as a resident and adult deeply concerned about the environment I live in, and celebrate ... to share any activism that honours, and respects wild life in my area.

New additions to my kitchen…

Tapioca for old school desserts - not bubble tea.

I LOVE using barberries - dried is better imo than frozen and I can’t find in Coffs.

I looked into growing them but it’s complicated and a pest in some areas.

Great however in Persian dishes and to add some sour berry flavour to stews and chicken dishes in particular. Their flavour is hard to describe, like surmac but with a few extra layers of flavour.

Tomato 🍅 powder? Not sure how I’ll use it yet. Suggestions welcome 🙏

HEEEY, and welcome to 2025.
I hope you’re enjoying zero marketing from me.

I’ve had a few enquiries about food tours . and despite it being tourist season, after a great but honestly exhausting end to 2024 I listened to my head as well as my heart and decided to take a break from tours and workshops until the end of January.

Almost feels like wagging school 🤔 I may have done that back in the day. Exhilarating 😉

That’s why you’re seeing more passion posts from me this month. I’m relishing playing in the kitchen and the garden and easing back into some art .... so many projects sitting idle waiting for (rarely) idle moments!

That’s not to say I don’t have some interesting tours and workshops in 2025 to share with you...

My eNews is due out the last week in January - I’ll post a reminder to look out for it.

Meanwhile I’ve cracked open a box of vinyl records sitting idle since my move to Coffs Coast - and I’m enjoying my own hottest 100 ...

My BANANA LOAF Recipe

Melted butter, to grease pan
265g (1 3/4 cups) self-raising flour
40g (1/4 cup) plain flour
1 tspn ground Cinnamon
1 tspn ground Cardamon
Slurp of vanilla extract
140g (2/3 cup, firmly packed) brown sugar
1 T currents, soaked in a small amount of dark rum (optional)
2 overripe medium bananas (1 1/4 cups)
2 eggs, lightly whisked
125ml (1/2 cup) milk
50g butter, melted, cooled
1 just ripe banana for garnish

Preheat oven to 180°C. Brush an 11 x 21cm (base measurement) loaf pan with melted to lightly grease.

Line the base with non-stick baking paper, allowing it to overhang.

Sift the self-raising flour, plain flour and cinnamon into a large bowl.
*I use a wire whisk to mix the dry ingredients.

Stir in the sugar and make a well in the centre.

Mash bananas in a medium bowl. Add the eggs, milk, and melted butter, and stir until well combined.

Add the soaked currents and mix through.

Add the banana mixture to the flour mixture and stir until just combined. Spoon the mixture into the prepared pan and smooth the surface.

Add a slice or two of banana on top of the batter as a garnish, cut side up.

Bake in preheated oven for 40-45 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside in the pan for 15 minutes.

Turn onto a wire rack to cool completely. Cut into slices to serve.

A little more roasted than planned but no problem. Now canned in olive oil for a lazy pasta dish.

I’ve planted some new tomatoes 🍅 this was to use up and preserve the current crop rather than have them spoiling in this humidity.

Leaving the leaves on helps when using tongs to pick them up off the baking tray.

No salt or herbs just cold pressed olive oil.
