Scarpaccia di Zucchine Recipe👇🏼👇🏼👇🏼🤌🏻

1 lb. Zucchini small
2 Onions medium thinly sliced (the recipe calls for raw onions, but I prefer to sauté mine a little in EVOO)
1 clove of Garlic minced or cut in half (your personal preference)
½ cup Milk
4 tablespoons all-purpose Flour
2 tablespoons Cornmeal + some extra to sprinkle on top
2-3 Fresh Rosemary Sprigs
1 Egg
Extra Virgin Olive Oil
Salt and (Pepper optional)

Thinly slice the zucchini, salt to taste and set aside. In the meanwhile, beat the egg with flour and milk and cornmeal to make a smooth batter
Pour the zucchini, sliced onions and garlic into the batter and stir well. Pour the mixture into a greased oven-dish or onto parchment paper (thickness must not exceed ½ inch)
Place rosemary sprigs in pieces on top
Drizzle with several tablespoons of EVOO and sprinkle some more cornmeal on top for a nice crunch, bake in a hot oven 425° for about 30/40 minutes, or until golden brown

THE GREEKS GAVE ITALY IT'S NAME

The name "Italy" stems from the Greek Italos, a legendary king of the Oenotrians, people of Greek origin who inhabited a territory from Paestum in the Campania to southern Calabria, among the earliest inhabitants of Italy. Italus was supposedly the son of Penelope and Telegonus, a son of Odysseus. It was both Aristotle and Thucydides who first told of Italus being who Italy was named after.

The Greeks gradually came to apply the name Italia to a larger region covering most of Southern Italy, but it was during the 1st century BC that Augustus expanded the name to cover the entire peninsula including the Alps.
The Greeks referred to these people as Italoi. Under Emperor Diocletian the Roman region called Italia was further expanded to include the islands of Sicily (including the Maltese archipelago), Sardinia and Corsica.
Another reason for the name might come from the Greek word Aethalia, meaning "land of fog and smoke", referring to its many volcanoes. Mount Etna gets its name from the same etymological root.

Happy birthday Pinocchio!
Pinocchio is a fictional character and the protagonist of the children's novel 'The Adventures of Pinocchio' (1883) by Italian writer Carlo Collodi of Florence, Tuscany.
Pinocchio was carved by a woodcarver named Geppetto in a Tuscan village. He is created as a wooden puppet, but he dreams of becoming a real boy. He is known for his long nose, which grows when he lies.
The Adventures of Pinocchio was originally published in serial form in the Giornale Per i Bambini, one of the earliest Italian weekly magazines for children, starting from 7th July 1881.
In the original serialised version, Pinocchio dies a gruesome death: hanged for his innumerable faults, at the end of Chapter 15. At the request of his editor, Collodi added chapters 16–36, in which the Fairy with Turquoise Hair rescues Pinocchio and eventually transforms him into a real boy, when he acquires a deeper understanding of himself, making the story more suitable for children. In the second half of the book, the maternal figure of the Blue-haired Fairy is the dominant character, versus the paternal figure of Geppetto in the first part. In February 1883, the story was published in a single book with huge success.
Children's literature was a new idea in Collodi's time, an innovation in the 19th century. Thus in content and style it was new and modern, opening the way to many writers of the following century.

Happy Easter! Buona Pasqua!! I wanted to share an Italian Easter tradition today. The Easter dove is a leavened cake in the shape of a dove, a symbol of peace and rebirth. Its recipe is simple: flour, sugar, eggs, butter, sourdough and flavorings such as vanilla and orange. The dove is decorated with sugar glaze, almonds and candied fruit.
