Gastronomy version
⭐️One of the great attractions of the North of Argentina is its gastronomy. Which is known for its variety and unique colours and flavors that reflect the richness of the culture and traditions of the region. The golden hues of maize, the deep reds of peppers, the fresh greens of herbs, and the earthy ochres of spices come together in dishes such as humitas, tamales, and stews. Each recipe is a work of art that celebrates the tradition and authenticity of this unique region.
WHAT DO WE EAT TODAY?
👉🏼Entry: empanadas, humita and/or tamal.
👉🏼Main dish: a good locro or guaschalocro.
👉🏼Dessert: quesillo with cane honey, cayote, cuaresmillo, figs or pumpkin in syrup.
✔️Empanadas: are a symbol of tradition and flavour. With soft pastry and juicy fillings combining meat, spices, onion, and sometimes egg or potato, each bite pays homage to the region’s culture.
✔️Locro: it is a traditional and emblematic dish. It is a thick stew made from white corn, beef, red sausage, pumpkin, onion and different spices.
✔️Humita: it is a kind of tamal made from choclo (tender corn), ground or grated, mixed with onion, chili, spices and cheese. It is wrapped in the same sheet or corn husk. It is a very tasty dish.
✔️Tamales: vary slightly depending on the province. The dough is made from corn and wrapped in corn husks (chala). Each province has its own technique. The filling, depending on the region, consists of beef, goat, or pork, mixed with corn, spices, and in some cases, onion and hard-boiled egg.
✔️Quesillos: consist of portions of fresh cow or goat cheese, artisanal production.
🍯Cane honey and cayote are iconic flavours of Northern Argentina.
Sweets and jams in Catamarca are more than just flavours; they are heritage and tradition. Made with local fruits such as quinces, figs, and grapes.
🍷Salta is known for its , especially Torrontés wine, which is an excellent option to accompany the traditional dishes of the region.
