Kumquats

This time I have got my hands on some of my favourite fruits…Kumquats!
The tree was absolutely packed with fruit and so many were about to go to waste. Thanks for letting us rescue a whole crate full. It didn’t make a difference to the tree though 🙂

One of the new goodies we have on the shelf this week is a delicate but flavourful Kumquat Gelee.
A byproduct of making candied kumquats, the poaching syrup is reduced and set by itself due to the high amount of pectin in the fruit (seeds&skins).
The end result is this beautiful, bright and melt in your mouth taste of summer!.

HERE’S TO A NEW YEAR!

A proper break and the start to the new year always give me time to reflect on all the ups and downs of previous months. Long hours and self-set standards mean that owning and running a small business (mostly by yourself) is a real roller coaster on a weekly basis! I am lucky and grateful to have established such an amazing and loyal customer base to make it all worth it.

At the end of the year, I always like to have a look back on what I have achieved, not necessarily financially but in relation to the core values of Fallobst… which is and always will be: reducing food waste.

Yes, over the past year, I have made in excess of 7000 artisanal hand shaped and slow fermented sourdough loaves. But in the process of doing so I used up to almost 100kg of “spent” malt, and about 20kg of used coffee grounds in our sourdough and cookies! Along side that, a whole load of rejected or excess fruit and vegetables destined to be wasted was used in our condiments and pastry specials. From fruit powders and spice mixes, to salts, jams and fermented condiments and pastes, vinegars, kombuchas, juices to waffles, tarts and pizzas.

Overall, it was a very productive year with lots of improvements and updates on the building as well as in the kitchen. We did workshops and events like our first Blues at Bridgetown. I can’t wait to get back into it and get baking and experimenting again. I already have produce ready to go!

We will be back open from this
Wednesday to Friday 8:30- 2:00
Saturday 8:30 - 12:00

Thank you so much to everyone, you are all part of the journey, and I couldn’t put so much into it without your support.
To another great year!

GERMAN GINGERBREAD

We get a lot of questions asking what is in our Gingerbread Spice Mix; it’s a secret! No it’s not really 🙂 But it does contain lots and lots of different spices as well as our Orange Peel Powder (made from seconds of course!).
We put it in our profiteroles, our chocolate tart, in crumble on our waffles, in granola, in hot chocolate… you can even put it in your Christmas Gingerbread Bikkies 😉 It smells like Christmas!
We have jarred it up for you in these beautiful little glass jars to take home. Perfect also as a little Christmas gift or stocking filler.

Ice-cold Kombucha is back for the Summer!

It’s going to be HOT today. Perfect timing 🙂 Our all-natural, non pasturised Kombuchas have been brewing and we have the first ones ready for drinking straight away!
This beautiful golden colour is from the infusion of orange discs and mint into the tea. Not only are they full of all the good stuff due to being fresh and non pasteurised, they continue to ferment causing that satisfying fizz when you open up the lid. Limited numbers until the next batch is ready!

Last night we were invited to meet some of the 100+ other businesses featured in a new guide. The South West Food and Beverage Capability Guide is a project of the ‘s Food Industry Innovation program, designed to connect growers and producers.

This “list” of businesses has been developed by them to be more like a beautifully photographed, carefully put together “book”. They have done an amazing job!

There is no physical copy as yet, as the list is constantly being updated and evolving. But you can browse the guides here:

https://www.agric.wa.gov.au/capability-guides

There is one for each region in Western Australia.

We will also have brochures to browse with info and the link at the Fallobst Larder.

And to all the new and old friends we met: thanks for the inspiration and chats!

What a weekend.

After a massive week at the Fallobst Larder I decided I need to rest and recharge.

For that reason I will open the larder
Thursday-Saturday next week only.

Although it’s a lot of hard work working in the hospitality industry, we had a great day being part of the street party on Saturday at the
It was a good practice round to see how our vision for outside dining would work.

I wanna say a massive thank you to the lovely people and local businesses , , , for their continued support and who helped me out with, tables, chairs equipment etc and advice to pull it off!

Also a thank you to the suppliers of the beautiful local produce that I was able to use on my specials this week. Oranges, asparagus, leek, mint, parsley etc. What a great community to be part of, thank you so much.

And lastly a huge thank you to all the regulars who support us! Thanks for still coming in on a Saturday during Blues to bring your family and friends for a visit to our little shop. I appreciate your support and feedback tremendously.

I hope you have had a great weekend and see you next week… on Thursday!

Thank you,
Will

Alrighty guys: we are getting inundated with requests to hold breads over the next few days.
We appreciate the enthusiasm but PLEASE remember that we CANNOT hold breads!!

Yes, we do wholesale orders for multiple local businesses but these are always organised well in advance: this weekend is BLUES guys!!! We are crazy busy.

If you would like to pick up multiple loaves for your cafe/food van/air bnb or for family, you will still need to come down early like everybody else. We DO NOT HOLD bread as we try to keep it fair for the loyal locals who consistently come down for opening or patiently wait in line for their fresh bread weekly or multiple times a week. We have people insistently travelling from Pemberton and Bunbury! Amazing!

This is also why we do multiple batches throughout the day: so that everyone has a chance to pick it up nice and warm from the oven 😊

We are open 8.30am everyday this week except Sunday. Sunday we plan to enjoy the music 🎶

Saturday we will be serving food in our little garden area so will stay open until sold out.

Again, we really appreciate support and enthusiasm we just want to keep it fair! There WILL be bread and waffles still on Saturday.

See you all at Blues!
