Our New Cherry Vinegar is finally ready for bottling.
I wasn’t sure about how that one would turn out but I’m very happy with the result.
It’s deep red colour as well as it’s bold flavour remind me of a mix between a red wine and balsamic vinegar, it’s quiet delicious.
Wild fermented, raw, unpasteurised , scrap vinegar. Made only from second cherries, water and sugar.
Limited small batch will be only available at this weekends @nannupmusicfestival

Our Mullberry tree was once again exploding with beautiful juicy, sweet and tart fruit this year. The relativ short season of these delicious berries asks for differnt ways of preserving so you can use them all year around. The obvious and best thing is to turn them into jams and fruit sauces or freeze them for later use.
But this year we have been experimenting to create this amazing Mullberry Mead. Its a great way to use some of the fruit and turn it into a boozy refreshing drink.
Mead is an alcoholic beverage where the honey plays a vital role in the fermentation process, hence why its also sometimes referred to as honey wine.
The secret to this wild fermented drink is the wild yeast present on freshest berries as well as the amzing local raw unpastuerised honey from @blackwoodhoney. No need for additives, additional yeasts or preservatives, let nature do its thing and enjoy the beautiful colour of this homemade brew.
