Mango Chutney
Frances emerges from the food adventure kitchen with another winner!
Slice 4 underripe mangoes and in a stainless steel bowl add minced garlic and ginger, 5 cloves, 1 cinnamon stick, 4 cardamon pods, 3 chillies and 2 cups sugar. Let sit overnight then cook until thick, approx 30 minutes, then add 1 cup vinegar and 5 peppercorns and cook for a further 5 minutes. Voila! Store in sterilised jars although it probably won't last long...its too delish!
