We move to Italy today and will be making, 'Easy ravioli pizza'. 🇮🇹

Prep 15m | Cook 30m | Serves 4

Is it pizza? Is it pasta? It's both! The best of both worlds - pizza formed from pasta! This cheesy mash-up of everyone's two favourite Italian-inspired dinners will have everyone asking for more and the recipe!

Ingredients (10)

325g packet Rana Pumpkin & Roasted Onion Ravioli
Olive oil, to grease
1 egg, lightly whisked
155g (1 1/2 cups) coarsely grated mozzarella
80ml (1/2 cup) bought tomato pasta sauce
50g button mushrooms, thinly sliced
40g (1/4 cup) kalamata olives, pitted
1/2 small red onion, cut into wedges
1/4 small red capsicum, deseeded, thinly sliced
Fresh basil leaves, to serve

Method

Step 1
Preheat oven to 220°C/ 200°C fan forced. Lightly grease a baking tray with Olive oil, to grease. Cook 325g packet Rana Pumpkin & Roasted Onion Ravioli following packet directions or until al dente. Refresh under cold running water. Drain. Transfer to a bowl.

Step 2
Toss 1 egg, lightly whisked and 100g (1 cup) 155g (1 1/2 cups) coarsely grated mozzarella with ravioli. Transfer to prepared tray, overlapping ravioli to form a 26cm disc. Lift ravioli slightly and spread a little cheese mixture between each ravioli. Bake for 10 minutes or until golden.

Step 3
Drizzle the 80ml (1/2 cup) bought tomato pasta sauce over the ravioli base. Top with the 50g button mushrooms, thinly sliced, 40g (1/4 cup) kalamata olives, pitted, 1/2 small red onion, cut into wedges, 1/4 small red capsicum, deseeded, thinly sliced and remaining 155g (1 1/2 cups) coarsely grated mozzarella. Bake for 10 minutes or until golden. Scatter over Fresh basil leaves, to serve to serve.

We move to Switzerland today and will be making. 'Swiss chicken'. 🇨🇭

Prep 20m | Cook 40m | Serves 4

Ingredients (11)
2 tbsp plain flour
4 chicken breasts fillets, skin on
90g butter
1 garlic clove, crushed
3/4 cup dry white wine
8 slices ham
8 slices Swiss cheese
1 tsp French mustard
1/2 cup cream
3 green onions, thinly sliced
steamed vegetables, to serve

Method

Step 1
Preheat oven to 180°C. Season flour with salt and pepper. Coat chicken breasts lightly with seasoned flour.

Step 2
Melt butter in a non-stick frying pan over medium heat. Add garlic and chicken. Cook chicken for 2 to 3 minutes each side, or until golden. Add wine. Bring to the boil. Reduce heat to medium-low. Simmer, covered, for 15 to 20 minutes or until chicken is just cooked through. Remove chicken to a heat-proof dish.

Step 3
Place ham and cheese on top of chicken. Bake for 10 minutes or until cheese has melted.

Step 4
Meanwhile, boil wine mixture in frying pan over high heat until it has reduced by half. Reduce heat to medium. Add mustard, cream and onions. Cook, stirring, for 2 minutes. Place chicken onto serving plates. Spoon over sauce and serve with steamed vegetables.

This won 1st place in an apple bake-off contest with this recipe. It is the easiest and best apple pie you will ever taste!. It has no crust and it doesn't need one. Use Granny Smith apples because they are the best apples for pies. Enjoy!!!!

Prep Time: 15 mins | Cook Time: 1 hr 5 mins | Total Time: 1 hr 20 mins
Servings: 8 | Yield: 1 to 9 - inch pie

Ingredients

2 ½ cups peeled, cored and sliced apples
1 teaspoon ground cinnamon
1 teaspoon white sugar
1 cup white sugar
¾ cup margarine, melted
½ cup chopped pecans
1 cup all-purpose flour
1 egg, lightly beaten
1 pinch salt

Directions

Step 1
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan with margarine.

Step 2
Fill 2/3 of the pan with sliced apples. Sprinkle with cinnamon and 1 teaspoon sugar.

Step 3
In a medium bowl, mix 1 cup sugar with the melted margarine. Stir in pecans, flour, egg and salt. Mix well. Spread mixture over the apples.

Step 4
Bake in preheated oven for 65 minutes, or until golden brown.

SILKY-SMOOTH CHOCOLATE, BEST COFFEE, PURE HAPPINESS!

Chocolate and coffee are celebrated all around the World as two favourite indulgent pleasures, so why wouldn’t you create one of the most decadent desserts on earth for your Mother?!

SERVES 6 | COOKS IN 40 MINUTES PLUS COOLING

Ingredients
150 g dark chocolate , (70%)
125 g unsalted butter
50 ml good espresso
2 large free-range eggs
125 g golden caster sugar

Method
Preheat the oven to 120°C. Snap the chocolate into a heatproof bowl, add the butter, espresso and a good pinch of sea salt, and place over a pan of gently simmering water to melt very slowly until smooth, stirring regularly. Meanwhile, whisk the eggs and sugar together until pale and doubled in size, then carefully fold in the melted chocolate mixture.

Boil the kettle. Divide the mixture between 6 coffee cups or ramekins and put them into a roasting tray. Place the tray in the oven, then carefully pour in enough boiling kettle water to come halfway up the side of the cups. Bake for exactly 20 minutes, then carefully remove from the oven and leave to cool in the water for 2 hours. To serve, shave over some extra chocolate, or add fresh fruit like cherries, blood oranges or wild strawberries, with a dollop of yoghurt or crème fraÎche.

A history of Labour Day in Queensland:

Labour Day has been an official Queensland public holiday, celebrated on the first Monday in May, since 1912 (except for 2013 to 2015 when the holiday was moved to October) and before that as Eight Hours Day since 1901. Before its official recognition as a public holiday, parades and celebrations had taken place in Queensland since the 1860s. The first celebration took place in Brisbane on 16 March 1861 and was essentially a celebration by a small number of skilled building workers who had recently achieved an eight-hour working day. The date of the event was chosen to coincide with the anniversary of the first workers achieving the eight hour day in Queensland.

We move to Switzerland today and will be making, 'Asparagus and gruyere tart'. Gruyere is a hard cow's-milk cheese named after the village of Gruyeres, Switzerland and it has a rich, sweet, nutty flavour. It is renowned as one of the finest cheeses for cooking. This golden tart with asparagus and cheese is May Day deliciousness at its best! 🇨🇭

Prep: 1h 25m | Cook 1h | Serves 8

Ingredients (8)

1 3/4 cups (265g) plain flour
125g chilled butter, chopped
1 egg yolk
1 tbsp iced water
3 bunches asparagus, trimmed, halved
2 eggs, lightly whisked
1/2 cup (125ml) thin cream
1/2 cup (40g) finely grated gruyere

Method

Step 1
Preheat oven to 200°C. Place the 1 3/4 cups (265g) plain flour and 125g chilled butter, chopped in the bowl of a food processor and process until it resembles fine breadcrumbs.

Step 2
Add the 1 egg yolk and 1 tbsp iced water and process until dough just starts to come together. Turn on to a lightly floured surface and gently knead until just smooth. Shape into a disc and cover with plastic wrap, then place in the fridge for 30 minutes to rest.

Step 3
Roll out the pastry to a 15 x 40cm rectangle, about 3mm thick. Line a shallow 10 x 34cm (base measurement) fluted tart tin with a removable base with the pastry and trim any excess. Place in the fridge for 30 minutes to rest.

Step 4
Cover pastry base with baking paper and fill with pastry weights. Bake for 10 minutes. Remove paper and weights and bake for a further 10 minutes or until golden. Reduce oven to 160°C.

Step 5
Meanwhile, cook the 3 bunches asparagus, trimmed, halved in a saucepan of boiling water for 2 minutes or until bright green and tender crisp. Refresh under cold running water. Drain well.

Step 6
Arrange half the asparagus in the base of the pastry case. Whisk the 2 eggs, lightly whisked, 1/2 cup (125ml) thin cream and 1/2 cup (40g) finely grated gruyere together in a medium bowl and pour over the asparagus. Arrange the remaining asparagus on top. Bake in oven for 30-40 minutes or until just set. Serve warm or at room temperature.

In a change from Global Cuisine! today, we are going to make something more local in celebration of Anzac Day tomorrow.

Everyone knows Anzac Cookies, but have you heard of Anzac biscuit crumble cake?!... Well, here is a great recipe. 🇦🇺

Celebrate Anzac Day with this Anzac biscuit-inspired crumble cake that is delicious served with caramel sauce and dollop cream.

Ingredients (8)

600g pkt caramel mud cake mix
2 Coles Australian Free Range Eggs
1/4 cup (60ml) vegetable oil
4 (about 110g) Coles Bakery Anzac Biscuits, crumbled
1/4 cup (20g) rolled oats
1/4 cup (20g) shredded coconut
20g butter, chopped
1 tbsp brown sugar

Method

Step 1
Preheat oven to 180°C. Grease a 20cm (base measurement) springform pan and line the base and side with baking paper. Place on a baking tray.

Step 2
Prepare the 600g pkt caramel mud cake mix using the 2 Coles Australian Free Range Eggs, 1/4 cup (60ml) vegetable oil and ⅔ cup (160ml) water following packet directions. Pour into the prepared pan.

Step 3
Place the 4 (about 110g) Coles Bakery Anzac Biscuits, crumbled, 1/4 cup (20g) rolled oats, 1/4 cup (20g) shredded coconut, 20g butter, chopped and 1 tbsp brown sugar in a bowl. Use your fingertips to rub the butter into the biscuit mixture until just combined. Sprinkle the mixture evenly over the cake batter in the pan.

Step 4
Bake for 1 hour or until a skewer inserted in the centre of cake comes out clean. Set aside in pan for 15 mins to cool slightly before transferring to a wire rack to cool completely.

Step 5
Place the cake on a serving plate and cut into wedges to serve.

SERVE WITH Coles Salted Caramel Topping and double cream.
