Our new series continues on bucket-list hotels you need to visit at least once continues today.

Forget four walls and a bed. Today we head to Nepal and will be checking-in at 'Hotel Everest View, Khumjung' 🇳🇵

One of the highest hotels in the world, Hotel Everest View doesn’t disappoint: it really does offer first-class views of the famous mountain from its perch on a ridge in Sagarmatha (Everest) National Park. Located 13,000 feet (3,962m) above sea level, the hotel has 12 rooms with panoramic views, a restaurant serving regional Khumbu cuisine and a bar. Guests can arrive via helicopter transfer from Kathmandu or, for a real Himalayan adventure, after a trek.

You will be able to travel around the world without leaving your kitchen with these international recipes.

We move to France today and will be making, 'French strawberry dessert cake'. 🇫🇷

Prep 25m | Cook 1h 05m | Serves 10

The world's most heavenly cake is gooey underneath with a sweet, crackable crust on top. Don't be tempted to drop the strawberries in too soon or they will sink!

Ingredients (8)
125g butter, at room temperature
2 tsp vanilla extract
270g (1 1/4 cups) caster sugar
2 eggs
1/4 tsp salt
225g (1 1/2 cups) self-raising flour, plus 1 tbsp extra
170g (2/3 cup) sour cream
375g fresh strawberries, hulled

Method
Step 1
Preheat oven to 180C/160C fan forced. Grease and line base and side of a 23cm (base measurement) round springform pan with baking paper.

Step 2
Use electric beaters to beat the butter, vanilla and 1 cup sugar in a large bowl until pale and creamy. Add eggs, one at a time, beating well after each addition. Add salt and half the flour and beat until just combined. Add half the sour cream and beat until just combined. Repeat with remaining flour and sour cream.

Step 3
Halve 125g of the strawberries and set aside. Coarsely chop remaining strawberries. Toss chopped strawberries with extra flour to coat. Fold into the cake mixture until just combined. Spoon the mixture into prepared pan and smooth the surface.

Step 4
Sprinkle the top with 1 ½ tablespoons of the remaining sugar. Bake for 35 to 40 minutes or until a thin crust has formed on the top. Arrange halved strawberries, cut-side down, on the top of the cake, pressing slightly into the crust. Sprinkle with remaining sugar. Bake for 20 to 25 minutes or until a skewer inserted in the centre comes out clean. Serve cake warm or at room temperature.

This one-of-a-kind hotel looks more like a gingerbread house, with a pastel-pink exterior carved with the shapes of woodland creatures and an interior featuring beamed ceilings, roaring fireplaces and sumptuous velvet fabrics. It looks even more magical surrounded by heaps of icing-sugar snow. The hotel has easy access to the ski slopes of Courchevel, with plenty of cosy spots inside for après-ski.

Today we head to Germany and will be checking-in at 'Schlosshotel Kronberg'. 🇩🇪

Guests are pretty much guaranteed to feel like royalty when staying at this grand hotel just outside Frankfurt. Built in the late 19th century for German Empress Victoria, the castle became an officers' club during the American occupation after the Second World War. Now the castle, which still belongs to the House of Hesse (a European dynasty), is a 5-star hotel that's been given a 21st-century update, though it has still retained many of the original furnishings, as well as artworks and the empress' extensive library. There's also a spa, golf course, park and a top-notch restaurant.

We move to Nepal today and will be making, 'Dhal bhat tarkari'.

Prep 40m | Cook 2h 20m | Serves 6

All you need is lamb, yoghurt, herbs and lots of spices to make Nepal's favourite dish.

Ingredients (31)
1 x 1.2kg easy-carve lamb leg, trimmed, cut into 4cm-pieces
200g (3/4 cup) Tamar Valley Greek Style Yoghurt
1/2 tsp turmeric
1 tbsp mustard seed oil
2 large brown onions, finely chopped
3 garlic cloves, finely chopped
2 tsp finely chopped ginger
1 tbsp ground cumin
2 tsp ground coriander
1 tsp chilli powder
5 cardamom pods, bruised (see note)
1 x 7cm cinnamon stick
5 whole cloves
2 fresh or dried bay leaves
125ml (1/2 cup) water
1/4 cup chopped fresh coriander
Steamed Basmati rice, to serve
Dhal
1 tbsp mustard seed oil
2 tsp mustard seeds
1 onion, finely chopped
2 garlic cloves, finely chopped
2 tsp finely chopped fresh ginger
1 long fresh red chilli, finely chopped
2 tbsp fresh curry leaves
1 tsp ground cumin
1/2 tsp turmeric
210g (1 cup) red lentils, rinsed, drained
500ml (2 cups) Massel chicken style liquid stock or Massel vegetable liquid stock
500ml (2 cups) water
20g butter
1 tsp garam masala

Method
Step 1
Combine lamb, yoghurt and turmeric in a bowl. Season with salt and pepper.

Step 2
Heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, for 10 minutes or until golden. Add the garlic and ginger. Cook for 1 minute or until soft. Stir in the cumin, coriander and chilli.

Step 3
Add the lamb mixture, cardamom, cinnamon, cloves and bay leaves to the pan. Cook, stirring, for 5 minutes or until the lamb changes colour. Stir in the water. Reduce heat to low. Cover and simmer for 1 1/2 hours or until the lamb is nearly tender. Uncover. Simmer for a further 30 minutes or until lamb is tender and the sauce thickens. Taste and season with salt and pepper. Stir in the coriander.

Step 4
Meanwhile, to make the dhal, heat the oil in a saucepan over medium heat. Add the mustard seeds and cook, stirring, for 1 minute or until the mustard seeds pop.

Step 5
Add the onion, garlic, ginger and chilli. Cook, stirring occasionally, for 5 minutes or until soft. Add the curry leaves, cumin and turmeric, and cook, stirring, for 30 seconds or until aromatic.

Step 6
Stir in the lentils, stock and water. Reduce heat to low. Simmer for 40 minutes or until lentils are tender and the mixture thickens. Stir in butter and garam masala. Serve with lamb mixture and steamed rice.

Recipe notes
Look for cardamom pods in the spice aisle. If they're unavailable, use 1/2 teaspoon cardamom seeds instead.

The opulent Faena Hotel Miami Beach rivals a world-class art gallery. We move to Switzerland today and will be making, 'Swiss meringue buttercream'. 🇨🇭

Prep 35m | Cook 10m | Makes 5 1/2 cups

For the best swiss meringue buttercream for any of your cake creations, you can't look past this recipe.

Ingredients (3)

250g bought pasteurised liquid egg whites
315g (1 1/2 cups) caster sugar
500g butter, at room temperature, cut into 2cm pieces

Method

Step 1
Combine egg whites and sugar in a large heatproof bowl. Place over a saucepan of simmering water (making sure the bowl doesn’t touch water) and cook, stirring occasionally with a large spoon, for 4 minutes or until mixture is hot to the touch. To test, transfer a small amount to a saucer and if mixture is hot to the touch, it is ready.

Step 2
Remove the bowl from heat and transfer mixture to a stand mixer with whisk attachment. Whisk on high for 10 minutes or until almost at room temperature. Replace the whisk with paddle attachment. Set speed to low and add butter, 1 piece at a time, beating well after each addition and increasing speed to medium halfway through, until mixture is smooth and creamy. (Do not rush this process. It can take up to 30 minutes.)
