To me one of the best ways of enjoying our truffles during the season and after the harvest is finished is truffle butter.
Pepe Saya cultured butter and fresh Tasmanian Perigord truffles.
We make heaps and freeze it.
Then melt it over a steak in and it is to die for.

Making Tasmanian Truffle Salt
During the winter truffle harvest we make truffle salt. Using freshly harvested Tasmanian truffles and Tasman Sea Salt flakes Tasman Sea Salt The truffles and the salt are so good no other additives are needed.
