A real privilege to try these two whiskies, side by side. Two of the oldest whiskies ever produced in Australia, one a vatted expression, the other from a single ex-Bourbon cask.
The vatted whisky, released for Sullivans Cove’s 25th anniversary, had rich fruit characters, spice and heavy, but well integrated oak.
The single cask was just released this week and a more floral profile balanced with mineral and flinty characters.
Both were outstanding, but it was the Single Cask that did it for me. Congratulations to anyone that got a bottle and to Sullivans Cove on this remarkable achievement.

are the first stop on our Hobart Brewery walking tour.
A great place to stop for a beer and a burger, Shambles is in the old Mundy’s Butcher, but it’s owner and brewer Cornell’s beer name puns that resonate with a lot of our visitors.
The ‘Dirty Copper’ Amber Ale is often a hit, but the ‘Crimea River’ Russian Imperial Stout is a firm favourite from the past.

These incredible plants are the hop bines at Two Metre Tall Brewery.
The first and last photos are less than three months apart, yet these plants have managed to climb all the way up a five metre trellis.
Hops only grow and flower once a year and there are many different varieties that are affected by the growing location and seasons, much like wine grapes.
Two Metre Tall are using a mix of varieties, like Pride of Ringwood, Galaxy and Willamette, but others like Citra, Mosaic and Simcoe are heavily used in Pale Ales and IPAs.
Book a tour with us if you’d like to join in on a trip to Two Metre Tall and learn more about the fine arts of brewing and distilling.

.whisky.week is a great chance to visit Tasmania and see the terrific selection of distilleries in this part of the world.
is one of the most well known games in town, with their 2014 French Oak cask HH0525 winning World’s Best Single Malt and really setting the stage for other Tasmanian distilleries.
This beautiful 19 year old American Oak Ex-Bourbon cask has classic caramel and butterscotch flavours and a really unique mustiness, reminiscent of books from a charity shop.
