We know that the flavours of a destination are what stays with you long after you return home. So, we found a delicious little reminder here by Ian Wallace from Taste.com.au of how scrumptious a simple dish can be when you do it 'Moroccan Style'.

Moroccan Spiced Yoghurt with Almonds

Ingredients:
2 tablespoons of milk
A pinch of saffron threads
3 cups of natural greek style yoghurt
1/3 cup caster sugar
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1 tablespoon vegetable oil
1/3 cup of flaked almonds
1/3 cup sultanas
1/4 cup of honey

Method:
Step 1: Bring the milk just to the boil in a small saucepan over medium heat. Stir in saffron. Set aside for 10 minutes to infuse.

Step 2: Meanwhile, line a sieve with a piece of clean muslin. Place over a large bowl. Spoon the yoghurt into the sieve and tie the edges of the muslin together to enclose. Top with a plate and press down to remove excess liquid. Place in the fridge for 30 minutes to drain.

Step 3: Transfer the yoghurt to a large bowl. Add the sugar, cardamom and cinnamon. Whisk to combine. Whisk in the saffron mixture.

Step 4: Heat the oil in a frying pan over medium heat. Add the almonds and sultanas, and cook, tossing often, for 2 minutes or until the almonds are golden and the sultanas are plump. Transfer to a small bowl. Set aside to cool.

Step 5: Divide the yoghurt mixture among serving glasses or bowls. Top with the almond mixture. Drizzle over honey to serve.

This is 'bibimbap' and it is one of the highlights of our day in Jeonju, South Korea.... Thursday, Oct 16 2024 JEONJU (B/L/D) This morning you’ll have free time to explore the village or visit the historical shrines and palaces. Chat to your leader about which works for you. From here, travel by bus to Sunchang Gochujang, a village famous for the production of gochujang (a traditional red chilli paste), for a tasting and demo on how it gets made. Grab lunch at a restaurant that specialises in fermented bean soup. Later, take a stroll around the base of Mt Gangcheon, and choose whether to work up your appetite by walking a little further to a nearby waterfall. For dinner tonight, we will visit the most famous bibimbap restaurant in Jeonju. The bibimbap here is so good it’s been declared an intangible cultural asset because of its iconic chef.
