When you think Japanese food, you probably think rice, miso and lots of savoury treats. But we'd like to pay homage to Japanese ingenuity in their use of the humble rice cooker here in this recipe by www.japancentre.com

By creatively utilising hot cake mix, sweet potato, and the slow-cooking nature of a rice cooker, this fluffy, sweet cake is easy to prepare and even easier to cook; just turn the rice cooker on and let it handle the rest.

Ingredients
200g pancake mix
1/5 sweet potato
150ml milk
1 egg
4 tbsp oil
4 tbsp sugar
1 apple
butter

Method
Prepare the apples: Peel, core and slice 1 apple. Cook with butter in a saucepan for 15 - 20 minutes until soften and slightly brown at the edge.

Prepare the sweet potato: Cut 1/5 sweet potato into small-sized cubes and soak in water for 5-10 minutes.

Prepare the batter: In a bowl, mix 200g pancake mix, 150ml milk, 1 egg, 4 tbsp oil and 4 tbsp sugar. Add the sweet potato to the bowl and mix.

Layer the bottom of the rice cooker with the cooked slices of apples: Pour the batter into the buttered cooker bowl on top of the apple slices and switch the cooker on to a regular white rice setting.

Serve and enjoy: Take rice cooker out of machine when the cake is finished cooking and allow the cake to cool in the bowl before removing. Enjoy with cream, custard or a scoop of ice cream.

Itinerary focus: Kimberley and Top End 2025
Day 2 - Darwin to Kakadu

An early start this morning as you make your way towards the World Heritage listed Kakadu National Park, travelling along the Arnhem Highway and into Fogg Dam Conservation Reserve. These wetlands have international significance because of their beauty and natural ecosystems. A great variety of fauna can be found here as well as a large variety of birdlife. It is the largest national park in Australia, which
hosts some of the world’s finest Aboriginal rock art and a mind-boggling variety of habitats, including floodplains and savannah woodlands.

Your first stop within the park is Bowali Visitor Centre, where you can gain insight into the landscapes and wildlife of Kakadu. Then you head to the very north of the park, to Ubirr where you will enjoy a guided walk through galleries of ancient Aboriginal rock art. You will learn about bush tuckers and bush medicines before reaching the top of the plateau, where you can relax and enjoy the spectacular view over the floodplains and the panoramic vistas of Arnhem Land escarpment.

Lamington ice-pops

Ingredients
• 2 litres vanilla ice-cream
• 1/4 cup strawberry jam
• 3 x 180g blocks dark chocolate, chopped
• 1 1/2 x 220g blocks milk chocolate, chopped
• 250g packet shredded coconut

Method
Step 1
Grease a 19cm square cake pan. Line base and sides with baking paper, extending paper 3cm above edges of pan.

Step 2
Place ice-cream in a large bowl. Set aside for 10 minutes to soften slightly (don’t allow ice-cream to completely melt). Fold jam through ice-cream to create a marbled effect. Spoon mixture into prepared pan. Level with a spatula. Insert sticks evenly into ice-cream in rows of 6 x 6. Freeze overnight.

Step 3
Remove ice-cream from freezer. Stand for 2 minutes before removing from pan. Working quickly, cut ice-cream into squares, with a stick in the centre of each square. Place onto a baking paper-lined tray. Return to freezer immediately. Freeze for 2 hours.

Step 4
Place chocolate in a microwave-safe bowl. Microwave on HIGH (100%) for 2 to 3 minutes, stirring every 30 seconds with a metal spoon, or until melted. Set aside to cool for 10 to 15 minutes.

Step 5
Place coconut in a bowl. Working in groups of 3 (see note), dip 1 ice-pop at a time into chocolate to coat all over and quickly press each side into coconut to cover. Return to freezer immediately. Repeat with remaining ice-pops. Serve.
