Happy Christmas!🎄

A quick note from me before we all switch off and go into family mode for Christmas.

Thank you everyone for your support this year as we launched Pink Pelican! We have the most wonderful 2025 planned and can’t wait to travel with you.

But for now, it's time to put the laptop and phone away and get this Christmas on the road!

Thanks again and wishing you all a very happy, calm and safe break.

Flis and the Pink Pelican team x

Ps - How we wish we were feasting on this cocoli (fried, salty little donuts with soft cheese prosciutto and bubbles) situation on Wednesday! It was so incredibly good. This was one of the dishes we cooked and shared at our workshop with last October. We can’t wait to get back there in May and see what Spring deliciousness Emiko has planned for our group to cook!

Whether or not you’re travelling with us next year (though we hope you are!), here are some shows to watch these hot Summer days if you fancy escaping to Venice’s twinkling canals, Mexico’s vibrant markets, Bali’s incredible food culture and Piedmont’s valleys of truffles and wine. Armchair travel anyone?

🇮🇹 For our Northern Italy trip (May 25’) - Stanley Tucci’s episode on Piedmont. You can’t beat Stanley for some excellent armchair travel and in this episode he visits many of the places on our itinerary in Piedmont! It’s a great teaser for next May (SBS on-Demand).

🏖️ For our Bali trip (May 25’) - Paradise Kitchen Bali, with Lauren Camilleri (SBS on-Demand).

🇲🇽 For our Mexico trip (Nov 25’) - Searching for Mexico, hosted by Eva Longoria (SBS on-Demand).

✈️For the Venice/Slovenia trip (Nov 25’).

Odio Natale is a fabulous rom-com set in and around Venice, for bonus points watch in Italian (with subtitles!). Soph is on to season 2 of this one and it’s getting her very excited to be there next November (Netflix).

But first, Pink Pelican’s December newsletter is coming out tomorrow morning and I’d love you to sign up to receive it and all the latest trip updates from us.

Who knows, maybe it will inspire you to book in a trip for yourself next year?

Meriel travelled with us to Northern Italy last May. Here’s what she said about the experience! Thank you Meriel, we loved having you in this group.

If you’re thinking about joining us in May 2025, please get in touch via our website, below! We’d love to chat.

"Thank you Sophie and Felicity for a wonderful Food Tour to Italy. All your planning for the trip well and truly exceeded my expectations.

I would highly recommend any of your future tours having enjoyed 8 wonderful days and nights traveling from Turin to Tuscany.

There were so many special moments for me from the Palaces and gardens of La Venaria Reale to the historic coffee and wine bars of Turin and Genoa as well as several visits to the food markets and especially the White Truffle market.

The e-bike tour was yet another highlight cycling with ease up to the hill top towns and through the local vineyards- it was a day to remember ending with a magnificent lunch with the best view ever at the Marrone winery .

Meeting Emiko Davies and her husband Marco in the charming town on San Miniato was a fabulous insight into the local Italian cuisine, followed by a delicious tasting of breads and risotto paired with local wines was yet another of many memorable days.

I loved the fact that there was always an element of surprise each day from the accommodation to the locations we passed through. Cinque Terre- one of my dream destinations didn’t disappoint despite some arduous terrain it was worth every step of that journey to be met by unique hilltop towns.

I hope one day I can rejoin you for another tour, Meriel x "

Sometimes the best food experiences are the ones you have on the go. Discovering the ‘street food' of a town or region can tell you so much about its history and people.

Our Northern Italy trip (this coming May 2025) and Venice/Slovenia trip (Nov 2025) will feature lots of exploring and discovering the very best street food of the towns and villages we visit.

Here are five of tour guide Sophie Hansen @‌locallovely's (aka my) favourite street food discoveries from our most recent trip. If you’d like to come along to our next one, please get in touch via DM or email, we would LOVE you to join us!

🦐 Fritto Misto sitting in the harbour, legs dangling in the water at Riomaggiore (the last stop on our Cinque Terre day!).

🍨 Gelato stop along the way on our Turin walking tour at Mara Dei Boschi (the nocciole/hazlenut was the clear fave in our group).

🌿 Pesto boats from Genoa’s Pesto Bene, in the heart of the ancient old city (near the port). Such a great idea! Golden pieces of focaccia with the middle scooped out and replaced by freshly made pesto.

👌🏻 Speaking of focaccia, we visited a few historic bakeries while in Genoa, Antico Forno Patrone was my favourite.

🍹 Lemon and wild blueberry granitas on the Cinque Terre trail between Vernazza and Corniglia were a highlight. And I know I’m stretching it to call this ‘street food’, more like ‘trail refreshment’ but go with me. Or rather, come with me in May!

“I highly recommend this very special tour through some unique and beautiful areas of northern Italy!

Accompanied by our gorgeous organiser, Flis, and delightful tour guide, Sophie, I was incredibly spoilt from Day 1. Both Flis & Sophie went above and beyond – I felt truly cared for, safe and always very well fed! The small details were all attended to and nothing was ever too much trouble.

There were so many hidden gems on this tour including historic sites, fresh food markets, an early morning Bicerin mission (oh so good!), lunch in an historic palace garden and a tour of Italy’s Wine Bank – unforgettable experiences!

I have so many highlights - cooking and lunching with beautiful Emiko Davies & her husband in San Miniato, e-biking through vineyards of the Langhe region, hiking the Cinque Terre Coast trails and a cooking class with Sophie in our Tuscan villa were among my favourites, but there were so many more.

It was such a special treat to spend eight days with like-minded women and enjoy exploring such a beautiful part of the world together – topped off with memorable meals, gelato, chocolate, wines of the regions and many laughs - heavenly!

Did you know that our food tours in Italy with Sophie Hansen always include at least two cooking classes?

On the last day of our last Northern Italy tour we hit up the San Miniato markets, shopped for produce then spent an afternoon cooking together with Sophie @‌locallovely sharing tips, recipes and techniques.

There were bubbles, chats, laughs and at the end we sat down at the villa’s beautiful long table and shared the meal we made together.

It was such a special night and we can’t wait to do it all again next May. Except with beautiful Spring produce!

We still have three spots left for this trip, so why not join us and come home with your cup full of memories, inspiration, new friends and cooking tips.

In the meantime, you can find the recipes for everything we cooked together via the link below,

And always, if you have questions about any of our trips, head over to the website or send us DM and we can line up a time to talk it all through.

Last month, we took our first group to Northern Italy, and wow, we had a seriously fantastic group of guests. Everyone was just so lovely, fun, and enthusiastic.

Exhibit A: Julie aka @‌msrfrost

Jules! We were so happy to have you in the Pink Pelican gang, and thanks for all your help in my cooking demonstrations, your company on our early morning market expeditions, and your intrepid energy on that Cinque Terre hike! Sophx (and Flis!)

“Pink Pelican Tours have nailed the Italian recipe for gastro touring.
I’ve just arrived home to Australia after 8 days of the most delicious, fun, jam packed food tour of Northern Italy.
Along with a small bunch of like-minded food enthusiasts and the two fabulous women behind Pink Pelican Tours, the inaugural culinary adventure to the Piedmont and Tuscan regions was everything I had hoped for.
The busy itinerary was exactly the right mix of local food markets, architectural sightseeing, sampling local delicacies and aperitifs, eating in spectacular locations, and hiking, e-biking and walking excursions.
For me though, the highlights involved learning about new ingredients and flavour combos through expert cooking demonstrations and a hands-on session in the kitchen of our grand old Tuscan villa.
Our tour hosts, Sophie and Felicity were incredible. Always smiling, super accommodating and flexible, funny, enthusiastic, and ever ready for a spontaneous adventure.
Together they provided the secret sauce that made this trip truly outstanding. If you have the chance, seriously consider doing their 2025 Italian Tour, you will love it!
Cheers,
Julie F. Gold Coast.

Turin’s Three Best Cafes*

Last month we took our first group to northern Italy and kicked the trip off in the elegant, porticoed city of Turin; home of vermouth, hazelnut chocolate spread (you know the one), tramezzini (those fun little crustless white sandwiches cut into squares), Martinis, Fiat, the Shroud and dark magic. Interested yet?

We’re heading back in May 2025 and have two spots left, so if you’d like to chat, send us a DM or head to the link in our profile for all the info.

But in the meantime, here are three cafes our guide Sophie (aka me) took everyone to on our walking tour of the city. They are iconic, atmospheric and the best of the best (we set a high bar for everywhere we take our guests!);

Al Bicerin - Eat 1763, this little chocolate box of a cafe has been a locals favourite ever since. Most famous for invineting the ‘Bicerin’; a truly delicious drink made up of layers of espresso, hot chocolate and thick cream. Try it by candlelight on a misty Turin morning with the toasted hazelnut chocolate sandwich. Fun fact (we're full of them); see the spot under the clock in slide 3? That was famously Count Cavour’s (the ‘father’ of Italian unification) favourite spot. He wasn’t religious but the royal family (he was a trusted advisor) would go to the church across the square and he’d sit there keeping all warm and cosy and watch for them to come out after mass.

Cafe Mulassano - This tiny cafe right in the heart of Turin’s historical centre is exactly as it was when opened in 1907; decorated with precious marbles, bronze, floral motifs carved into wooden panels and a coffered ceiling. They do a great vermouth spritz and we loved the truffle and pear tramezzini (those little white triangle sandwiches).

Cafe Elena is the top corner of Piazza Vittorio Veneto, facing the river Po. It is one of Turin’s most historic cafes, founded in 1889 (fit out basically still untouched). A favourite lunch spot, they also do an excellent aperitivo with snacks.

As always, reach out via DM or email [email protected] if you’d like to chat about joining any of our tours.

We cannot wait to get back over there ✈️

Oh, Tuscany! The final destination for Sophie’s 8 day Northern Italy tour 🌳🌳🌳

We stayed in a charming Tuscan villa
near San Miniato, a beautiful Tuscan hilltop town halfway between Florence and Pisa, and equidistant from Lucca, Siena, and San Gimignano.

Here we indulged in two cooking classes - one with Emiko Davies
in San Miniato and the second with Sophie at our villa. They were delicious!👌

Emiko Davies, a beloved cook and author, and expert in Tuscan cuisine having lived here for many years. The class was an absolute highlight!

And for our last supper in the villa, we visited the local butcher and hit the local markets in San Miniato to buy fresh produce for Sophie’s cooking class 🥬🍆🧅🍅🫑🥖🧀 Wow, another highlight!

We poured local wines and bubbles and crowded around the kitchen table to cook together then sat down at the long rustic table for a fun night of delicious food, stories and laughter.

What an incredible 8 days with a fabulous bunch of people!

We’d love all our tours to create lifelong friendships; think we definitely achieved that on our very first tour with Pink Pelican Tours 🩷

We can’t wait for the next one!💃

If you’d like to book on Sophie’s next Northern Italy Tour in May 2025, there are just a couple of spots left! 🇮🇹

Cinque Terre - what a magic spot! Even more beautiful than the postcards! We stayed here just before Tuscany (San Miniato) to enjoy some time by the sea 🏖️

We split into two groups - some hiked between the five fishing villages while others jumped on the ‘Hop on, Hop off train’ from village to village exploring the narrow streets lined with pastel coloured buildings and sampling Sophie’s tips on local specialties like paninis, peace azzurro, batti batti focaccia and maybe an aperitif or two! 🍹

Delicious pizzerias, fresh seafood and wine bars in the village each night with our accommodation perched up on the hill overlooking the Italian Riviera - what a sight to wake to each day! ⛱️🌊
