From her humble beginnings in the small Italian town of Carapelle Calvisio in the province of L’Aquila in the Apennine region of Abruzzo, our mother began her passion for cooking her family’s traditional and outstanding cuisine. Her pastas, sauces and soups are from generations of recipes that have never altered. From her own mother and grandmother’s kitchens, our mother brought her recipes and te

chniques to Australia in the 1950’s. For over 50 years family, friends and now our customers have enjoyed and delighted in Elsa’s cooking.Twenty-two years ago, our parents opened a small provedore store in Hadfield where a wide selection of Australian and imported smallgoods, cheeses, antipasti and selected grocery items were available. Elsa began an experiment in this very store and introduced her lasagna and bolognese sauce to the public. To her surprise and the local community’s delight, these homemade inclusions were a big hit. Only using the freshest and most natural of ingredients, with no preservatives and additives, mum's meals quickly caught on as a healthy and guilt-free addition to our customers shopping list. Our mother’s two sisters soon joined the team to keep up with the demand. Much of our loyal clientele travel from Middle Park, Kew, Sunbury and other far off places to purchase their weekly fix of Elsa’s lasagna, pasta sauces, meatballs or any other delicacies she chooses to prepare for the waiting public. That small corner provedore now has an al a carte café added to it with a full-time chef and apprentice chef who have been taught to cook the pastas and sauces strictly to our mother’s recipes. Patrons can now dine in on, not only Elsa’s lasagna and sauces (now also including Napoli and Matriciana) but her handmade gnocchi, Arancini, meat or spinach and ricotta Cannelloni and Minestrone and Lentil Soups to name just a few. Mum has even mastered and perfected a gluten free range of lasagna and handmade gnocchi to dine in or take home. We are extremely proud and passionate of our homemade food and now under the Apennine Range, we supply our quality homemade sauces to other stores in the Melbourne Metropolitan area. We have enjoyed our mother’s homemade cooking for many years…NOW YOU CAN TOO!
