In Azerbaijan, the Tandir oven, recently inscribed on UNESCO's Intangible Cultural Heritage list, is more than just a cooking method – it’s a symbol of tradition and culinary artistry. One of its most iconic creations is Tandir Lamb Plov, a dish of tender Karabakh lamb paired with fragrant rice and sweet dried fruits. 🌾🍑

This royal recipe, once reserved for noble families and their honoured guests, is a true masterpiece of flavour and heritage.

🔥 How it’s made:
1️⃣ The lamb is skinned, cleaned, and seasoned with salt, pepper, and thyme.
2️⃣ Aromatic rice is boiled and mixed with dried apricots, sour plums, raisins, and chestnuts.
3️⃣ The mixture is stuffed into the lamb, sewn shut, and slow-cooked in the Tandir oven.
