🎣Savor the sea with Chef Sage's Beet-Cured Salmon Crudo!
Recipe provided below ⬇️



Beet-Cured Salmon Crudo
For the Salmon Cure:
• 1 filet of salmon (Chinook or Coho)
• 1 medium beet (raw), peeled and roughly chopped
• ½ cup kosher salt
• ¼ cup white sugar
• ¼ cup gin
• 1 tbsp whole peppercorns
• 2 tbsp whole coriander seeds
• 1 tbsp fennel seeds
For the Vinaigrette:
• Juice from orange or grapefruit
• 1 tbsp red wine vinegar
• 3 tbsp olive oil
• White or black pepper, to taste
• Splash of gin
• 1 small shallot, finely minced
For Garnish:
• Microgreens, dill fronds, or edible flowers
• Flaky salt
• Orange or grapefruit supremes
1. Prepare the Salmon Cure:
• Blend the beet, kosher salt, white sugar, gin, peppercorns, coriander seeds, and fennel seeds in a food processor or blender until it forms a paste.
• Lay a piece of plastic wrap on a flat surface. Spread a layer of the beet cure on the plastic wrap.
• Place the salmon filet on top of the beet cure, then cover the salmon with another layer of the beet cure.
• Wrap the salmon tightly in the plastic wrap and place it on a plate or baking pan to catch any leaks.
• Refrigerate overnight or for a minimum of 8 hours. For a firmer texture, leave the salmon in the cure for a few more days to create gravlax.
2. Rinse and Slice the Salmon:
• After curing, remove the salmon from the plastic wrap and rinse off the excess cure under cold water.
• Pat the salmon dry with paper towels. The texture should be slightly firmer than the original.
• Using a sharp knife, slice the salmon thinly and arrange the slices on a plate.
3. Prepare the Vinaigrette:
• In a small bowl, combine the citrus juice, red wine vinegar, olive oil, pepper, gin, and minced shallot. Mix well.
4. Dress and Garnish:
• Drizzle the vinaigrette over the sliced salmon and citrus supremes.
• Finish with a drizzle of good quality olive oil and a sprinkle of flaky salt.
• Garnish with microgreens, dill fronds, or edible flowers.
5. Serve and Enjoy:
• Serve the beet-cured salmon crudo immediately and enjoy!

With a deep passion for the great outdoors and a love for fishing, he began his incredible journey 26 years ago as a fishing guide. Jonathan has created countless memories and friendships from guiding guests to their perfect catch and sharing stories by the campfire to leading our team as our lodge manager.
