Summer season has officially started, but first a big CONGRATULATIONS goes out tonight to our returning summer student, Sophia!

You work hard at everything you do, from making beds, weeding gardens, baking tea buns to Physics, Math, Literature and everything in between!

We are so lucky to have you as part of our team at UHS. I will never forget one of the first things she said when starting with us last summer after I taught her how to fold a fitted sheet ... "I'm going to learn a few real-life skills here."

Well Sophia, life is going to throw alot of lessons your way and fitted sheets is hardly one of them, but let the record show you've mastered that too. You're going to grow so much and accomplish whatever you set out to do! Enjoy tonight, and all the celebrations ahead.

We can't wait to have another season with you on our team at the Settlement!

Congratulations 🎊 Valedictorian!!

Yesterday's most important post never made it to FACEBOOK, but its worth a post today and any day for that matter.

Biggest Birthday wishes went out to Farmer Mark yesterday! He was busy yesterday volunteering at Cormack's Community Wildlife garden tree planting, installing a walking trail, feeding animals, planting transplants, meeting with the provincial food network and more! We wouldn't be the farm we are today without Mark!

With over 20 years dedicated to the farming industry, years of operating experience, global perspectives and an environmentalist at heart, Mark is irreplaceable and is one of the best leaders our farm could possibly have.

Here's to you, Mr. Ledrew!

Don't worry though we still took some time had a great BBQ with friends, our WWOOFer decorated a beautiful cake and of course we relaxed and had a few cold ones. Hopefully we can get out for a fish this weekend and spend some well needed time in Nature!!

Happy Birthday Farmer Mark

Saturdays are for Fun! I can't tell you how many times I heard that this past weekend.

What a great reminder.

I can't remember how old I was the first May 24th Saturday when I first picked Fiddleheads. I only picked them this weekend while camping every year. It was always the tradition to hike the shores of Lomond River to scavenge enough for a feed.

I was a bit young and didn't even really consider it foraging, it was just what I did. Im not even sure where I learned and nobody showed me, I just knew you could eat ferns when they were young, who knows they probably weren't even the right ones. I clearly didn't know a whole lot about it at the time, I steamed em like broccoli, ate them fresh dipped in ranch. It's wonder we survived. Now I'm not saying that's how it's done and I don't recommend you go without being shown but like I said I didn't know any better, or as my guests have learned to say I was young, I was in love and I was enthusiastic. ☺

This year I found some rocks grounded up some spruce and made spruce salt, and toasted some alder pepper. After steaming the fiddleheads for 15 minutes we sautΓ© them in butter with Spruce and Alder.

Some traditions have stayed the same, but some new traditions were started. I think you might find me again next 24th of May weekend in some enchanted place called RiverSea.

Had a great experience sharing some culinary food flair and meeting new friends and reconnecting with old.
