Whenever I asked my daughter what will we have for dinner
Her answer would be PHO
And yes, we love PHO
It’s not only soup, it’s our PRIDE
Here is my own recipe. Please note that this is my own, it might be different from the others.
Ingredients:
📍Broth:
Beef Bones - 2lbs
Ginger (washed)
1 onion (washed, no peel)
Spices: Cloves, Cumin, Anise, Black Cadarmom, Fennel Seeds, Cinnamon Stick (2), Coriander Seeds.
📍 Pho Noodles
📍Green Onions, Cilantro (optional)
📍 Beef Balls
📍 Beef Tenderlion
📍Sprouts
📍Culantro
📍 Basil
📍Chilli (optional)
📍 Saracha + Hoisin Sauce
📍 Sugar
📍 Salt
Making Broth:
Turn the oven on for 200F, put beef bones + Onion + Ginger in for 5-10 mins til it’s brown.
While waiting, put all the spices in a frying pan in low heat until you can smell them. Put them in a cooking bag. Set aside
Put 4litters in a cooking pot, wait til it boils then put beef bones, onion, ginger and spices in. Put a little of salt in.
Cook for 3 hours.
🔥 If you have a pressure cooker, put everything in for 15m pressure cook.
While it is boiling, put sugar, salt in. To taste. I normall put 2 cups of sugar, 1/2 cup of salt for 4 litters
By pressure cooker, when done, I pour them into my big pot, fill them up with water to 4L.
Serve:
👉 Slide the onions, chop green onions.
👉 Pick basil leaves, cut off culantro
👉 Slide the beef really thin. As well as beef balls
Put rice noodles, sprouts, in a boiling water pot, quickly take them out put in a bowl.
Put slides of beef and beef balls in.
While the broth is boiling, slowly pour the broth into your bowl, cover up the meat. The meat will cook itself and won’t get chewy.
You can either put saracha and hoisin in or use it as a dip for the meat and beef balls
