What a wonderful idea!

4 years ago I asked my elderly parents what they'd had for supper. Mom replied "and egg sandwich". I said "that's what you had last night". Then I asked how many nights in the last two weeks they'd had the same thing. She said "I think most of those nights". So for Christmas I've been preparing and freezing meals for them. About 30 meals. And she has them gone by mid-February. Partly it's because of will to want to cook and partly it's because they can't think of anything to fix. THIS YEAR, I'm selling my restaurant (Ponderosa Steakhouse - last one in Illinois). She LOVES the vegetable soup we serve there. They won't pay to eat there and I let them eat for free, so she's been bemoaning the fact that she won't get that soup anymore after the first of the year. So my husband and I made a batch at home and I canned it for her. It made 22 quarts! I'm excited to give these to her. (Plus the 30 freezer meals
I did look for a meal service to provide meals for them, but they cannot handle any spice and everything those meal services offer is highly spiced.

Stop weeding and start eating. Have you ever eaten Hosta Shoots? They taste like asparagus without the later weird smelling p*e 😂 Okay what is the one thing you will never eat again? I will go first a Durian!!!!

Sauteed Hosta Shoots
* Make sure these have never been treated with anything!

Ingredients
- 8 ounces fresh hosta shoots as young and tightly coiled as possible, cleaned, rinsed and dried if needed
- cooking oil, 1 tablespoon
- Kosher salt and fresh ground black pepper to taste
- 3 Tbsp butter
- ¼ cup chicken or vegetable stock
- Dash of fresh lemon juice for finishing

Instructions
- Heat the oil in a saute pan or cast iron skillet until lightly smoking.
- Add the shoots and cook quickly, allowing them to brown lightly, keeping the heat at medium-high. Brown them on both sides.
- When the shoots are browned, deglaze the pan with the chicken or vegetable stock, add the butter and melt.
- Remove the pan from the heat and swirl it, turning the hostas over in the sauce that forms.
- Taste the sauce and season with a pinch of salt and pepper if you think it needs it. Add the dash of lemon juice.

A fun and educational experience just a few minutes from Moonlight Beach Suites!

It's Saturday, and Arielle and Barbosa the Barred Owls are anxious to meet new people! Our education centre is open today from 12PM until 3PM.

We have dozens of education animals, informational displays and exhibits, a garden walk, and even an ice cream stand! All beside the beautiful Atlantic Ocean. Come and learn about some of the wild animals we share our world with, what we do, and how to live side-by-side with nature.

We still have a 1-2 week opening in our lovely oceanfront Suite Nextasea ideally located on beautiful Lawrencetown Beach in Nova Scotia. (August 12 & August 19th weeks) It is adjacent to the Provincial Park so you feel like you are miles away from the hustle & bustle but actually only 1/2 hr from Halifax & Airport. Also adjacent to the AtlanticView Trail & we provide complimentary bicycles. Surf in your backyard! Relax on the beach or in the Hot Tub. Shoot a game of pool. We are happy to have a menu that caters to many dietary restrictions so you can always enjoy our tasty homemade meals. Have you tried our vegan avocado toast? Homemade Italian bread layered with roasted red pepper hummus, fresh avocado, pickled red onions, and Balsamic drizzle. Healthy & delicious!

We are open everyday 8 am - 6 pm for the summer!
