Onggi - The ceramic vessels are made from a special clay fired at high temperatures, creating a porous surface that circulates air while keeping contaminants out. This environment is key to the successful fermentation of kimchi making.

Making an onggi requires traditional skills passed down through generations. Each vessel is unique, shaped and glazed by hand, and fired in a kiln.
