Absolutely spectacular weather this Sunday morning. Blue sky, not too hot and just a little breeze. Perfect time to get on our bikes and ride.

Since bringing them home at the end of June, we've ridden just under 125 km, 35 of them today. Great low traffic road circuit west out of Lunenburg, along the Grimm Road (which was recently repaved), out to 332, south on the Lighthouse Route along the LaHave River to Riverport, and then beside the coast back to home. Beautiful scenery along the way, and an excellent work out.

Well, at least until we got to the Rose Bay Bistro, and stopped in for breakfast sandwiches. OK, I got the schnitzel sandwich instead of the breakfast one. Both were delicious, and fuelled our stretch back home.

Waiting for the next nice day for another ride and eat adventure.

In case you were wondering, most of my time in Newfoundland was spent immersed in Communities in Bloom activities, but I did have the opportunity to indulge in, and thoroughly enjoy local food specialties!

Start of a new chapter.

While we did take the new bikes put for a quick spin on Saturday, today marked the first official ride from home out towards Mahone Bay on the Bay to Bay trail. 22km total was plenty to get used to the new e-bikes.

Gayle chose an IGO, Canadian made, and with features and a ride that suited her. Large battery for longer rides, throttle for quicker starts and better hill climbs, heavy duty frame and tires and front shocks for bumpy trails and roads. Testing all these features out today, she was thrilled.

I selected a Trek Verve 2, primarily for the similar ride to my original Trek. The frame is more bike-like and the tires are less rugged than Gayle's. The Bosch motor is less powerful and a couple of times going up hills, I coveted her throttle, until I figured out the optimal gear and motor setting. In the end, going up hills, Gayle was a little quicker, but I felt very comfortable. On straights, I was a little quicker in high gear and my turbo settings than she was.

In terms of battery life, both batteries are still showing full charges.

We both feel great, if perhaps a little rusty. Time to get a few more local training rides in.

As of August 1, 2024, there are strict and complicated new rules that will govern bringing a dog into the United States. This applies to us as Canadians wishing to bring Ella into the country during a vacation, and to American family and friends who, after visiting with us in Canada, want to return home with their pets.

Researching this further, but if this is as onerous and ill-conceived as it seems on first read through, this may affect planned future visits.

Seriously, why didn't we think about stopping at a Garden Destination for a rest and lunch break before. Did it first time on a trip between Ontario and Nova Scotia, and it was relaxing, refreshing, and the food was delicious. It was way better and healthier than stopping in a crowded service centre and getting fast food.

An exceptional dining experience at Victoria’s Steak and Seafood Restaurant, Hamilton Ontario.

I found myself back in Southern Ontario on family matters, and my-sister-in-law Tracy kindly offered her home as my base for the time I would be here. I wanted to thank her for her generosity and decided to take her out for dinner somewhere where she hadn’t been before. Knowing she liked steak, I searched online, found Victoria’s Steak and Seafood Restaurant on King Street west at Locke, and decided to give it a try as the menu looked interesting and the reviews were very positive. What I didn’t expect was to discover an exceptional dining experience.

The outside of the restaurant was a little unassuming, but on walking through the front doors we were greeted warmly and we decided to seat ourselves at the attractive bar. We met Paddy working behind the bar and later, Mattie (my apologies if either spelling is incorrect). We asked about cocktails after looking at the menu, questioning the Osmanthus ingredient in one, and Paddy went to great lengths to explain and show us the tiny dried Osmanthus flower blossoms, even letting us take a whiff the bag to experience the aroma - which was a little like chamomile and delightful.

Tracy decided to give the Osmanthus a try. The flowers were infused in gin, with lemon and a frothed egg white and she loved it! I chose the Vulcan, a surprising but delicious combination of smoky Mezcal and sweet hazelnut Frangelico, with elderflower and a hint of spice from the red chili. Sipping our cocktails we chatted with Paddy and quickly realized that we were greatly enjoying the vibe in Victoria’s.

Mattie brought out an amuse bouche courtesy of the kitchen: two shucked oysters with a tasty Champagne sauce, pickled onions, and sprinkled with green onions. Both a tasty treat and a pleasant surprise to get us ready for our dinner.

We were shown to the restaurant’s seating area and began studying the menu when we asked Paddy, who said he would also be our server, if we could share items. Of course he said. We asked him if he would also help us with pairing each course with glasses of wine.

For the first course we chose Steak Tartare. It was beautifully prepared with
capers, shallots, dijon mustard seeds, egg yolk, a herb crumble, and served with house made potato crisps. I couldn’t help thinking I was back on holiday in France enjoying a steak tartare at a little country bistro. It was authentic and delicious. Paddy paired the dish with a Leaning Post Pinot Noir from Niagara, light yet flavourful, and a nice accompaniment to the flavours of the ingredients in the tartare.

Next, we selected the Bay of Fundy Sea Scallops. I live in Nova Scotia and we have an abundance of fresh scallops, and have tasted many ways of preparation, but Tracy and I both marveled at the colourful presentation when Paddy set the dish in front of us. Perfectly seared scallops sat on a bed of ajo blanco (a thickened Spanish sauce usually made from bread, crushed almonds, garlic, water, olive oil, salt and vinegar). Pieces of crispened ham, fresh green asparagus and sorrel contrasted with the scallops, and sea truffle (a savoury seaweed rarely served) and pistachio added taste accents. Tiny pink flower blossoms added colourful accents. The scallops were sensational - as good as the best of dishes eaten in Nova Scotia. They were flavourful, well seasoned and slightly crispy on the tops and bottoms, and delicate on the inside. The buttery Californian Grayson Cellars Chardonnay was an excellent match for the dish.

When finished, we were served two spoons of a refreshing mango sorbet to cleanse our palettes in preparation for the next course.

For the entré, we chose the 14oz Ribeye, and went with Paddy’s recommendation for the Seasonal White Asparagus, and Niagara Honey Glazed Carrots as the sides. Our well prepared and seasoned steak arrived. It was English Cut for ease of sharing and served with a savoury garlic, mushroom and rosemary sauce. It was medium rare - exactly how we ordered it - and truly an outstanding cut of steak. The asparagus spears - white due to low light growing conditions - came with a tarragon and mustard vinaigrette, and egg yolks, and beautifully accented with the tiny pink flowers and green onions. They were tender and tasty. The carrots were served with a creamy whipped feta, golden raisins and wildflower honey, and a pine nut and tarragon gremolata. The dish tasted as beautiful as it looked. The full bodied Doña Paula Argentinian Malbec made for a perfect pairing with the richness of the meal.

We were full, but had to try the Cheesecake dessert on Paddy’s recommendation. A round of rich, delicious and creamy cheese was topped with a berry jam, toasted meringue topping and a crumble on the side. To accompany our dessert, Tracy chose a Calypso cocktail with coconut rum and a pineapple shrub topped with toasted coconut. My selection was a velvety Port.

Savouring our post-dinner beverages we talked about how remarkable our Victoria’s dining experience was. The fantastic atmosphere and vibe we felt on arrival continued throughout the entire meal. Our service was exceptional from start to finish, and it was a pleasure to get to know Paddy and Mattie a little. We thanked the kitchen staff because our food was truly outstanding - and one of the best meals I’ve had in Ontario.

My only disappointment? My son and brother were to meet me a couple of days later and on the spur of the moment while leaving Victoria’s made dinner reservations for the three of us knowing they would love the experience as much as Tracy and I did. Unfortunately, schedules changed at the last moment, and I regretfully had to cancel the reservation. But I will be back in Hamilton again with my wife and will be sure to come in for another amazing dinner experience.

Had a little Covid craziness four years ago today. Gayle told me the garage door needed painting. With a shout out to the "I Think You're Grand" and "Paint Club" groups back in Brantford for their awesome "Spring Bloom" art challenge, "Franksy primed the door in the morning, then the rest of the door in the afternoon. By evening, the ephemeral tulip was gone.

Although the weekend was pretty wet, we managed to squeeze in a dry period to complete the final section of our walk to Liverpool along the Trans Canada Trail. We started in Mahone Bay, where the trail forks to the East - the Rumrunner's Trial towards Halifax - and began walking the 70.0 km to the west, covering the linked Adventure, Centennial, Bull Run and Trestle Trails in sections towards Liverpool.

The last stretch was quite interesting as the trail looped around the Brooklyn Energy Station - a biomass powered steam turbine plant, with massive piles of wood chips used in the process. Unfortunately the trial ended just past the plant in an industrial area along the water, and has not yet been completed into Liverpool, although we can see the recently upgraded Trestle section looping across the Mersey River a few kilometres ahead.

We covered a total of 4.3 km on our walk, with 2.3 km covered one way today bringing our Total Trans Canada Trail explored to date to: 515.8 km.

Although the trail westwards picks up again in. Liverpool, we'll leave that as a future goal. Our next target to explore is the stretch of trail that begins along the Halifax harbour front, crosses the harbour to Dartmouth, and continues eastwards towards Musquodoboit Harbour.

Well, the great solar eclipse of 2024, with 94.5% totality here on Nova Scotia's South Shore, is well past its peak.

This morning, I thought we wouldn't be able to see it because we neglected to get proper glasses. Kind neighbours Christine Thibeault-McDonald and Jeanne McDonald came through and shared theirs with us while neighbours gathered on their driveway to watch the drama unfold.

I no longer needed my skillet prop. Gayle and I had Eclipse Cocktails ready to savour.

I fiddled with my iPhone and the borrowed shades, and after several blurry attempts finally figured out the settings to capture one really good waxing shot about 5 minutes before peak, and one curious waning shot that almost seemed to be laughing at us.

Glorious late Friday afternoon of a busy week so we decided to cut out early and continue our quest to walk to Liverpool from Lunenburg (approx 76 km). Ella needed a good walk and we had clear blue sky and bright sun, but a cold, stiff breeze out of the northwest. We're getting close - less than 10 km to go till Liverpool.

3.6 km walked one way today bringing our Total Trans Canada Trail explored to date to: 507.5 km.

The solution to image quality is not to post the video directly to Facebook (which will reduce the resolution), but to post on YouTube, then share the link directly, as below.

Now I need to figure out how to make a better voice recording.

Our first attempt to create and publish a video of one of our adventures.

18/02/2024

Dear Experience Explorers followers. This page is really all about exploring new experiences and this experimental movie - my first using iMovie - qualifies under the definition.

My primary goal was to see if I could combine still photographs, add a voice-over (forgive the poor quality), add music and sound effects, and edit the pieces together using some of the tools available in the program in a compelling way.

Part two of the experiment was to see if I can upload the movie properly to Facebook and YouTube. Not completely happy yet with the image resolution so more research is needed.

The next attempt will include video segments. Who knows where this will lead.

From the hazy depths of memory from Parkside High School, I knew I had read Shakespeare’s Hamlet so I was familiar with the names Rosencrantz and Guildenstern, two minor characters in the play. Neither Gayle nor I were familiar with the play Rosencrantz and Guildenstern are Dead written in the 1960’s, or what we would be in for when we bought tickets to the Saturday performance at the Theatre Neptune in Halifax. What we did know was that the two lead characters were Billy Boyd and Dominic Monaghan, better known as Pippin and Merry, respectively, from the Lord of the Rings!

Seeing the two “hobbits” enter the stage was a fun moment, but that was overshadowed quickly by the story and the stellar performances of the two talented actors. Add in the excellent cast, clever set design, and the - at times - fast paced dialogue, we were transported to a different time and place far away from Middle Earth to Denmark around 1400.

In this tragic-comedy, rather than being minor characters, Rosencrantz and Guildenstern (or was it Guildenstern and Rosencrantz - neither were entirely sure which was which) were thrust into main roles for which fate held certain death. Rosencrantz and Guildenstern were two of a kind, almost Tweedledee and Tweedledum like, and we wondered if they were possibly two halves of a whole character. The two protagonists often talked over each other, and at times the audience endured long periods of silence, punctuated only by facial expressions both comic and poignant. They talked often about death. Would they escape their fate in the end? Coin flips that always turned up as heads suggested an inevitable result.

The 2 hour 50 minute duration is punctuated by two intermissions, but we found the time passed quickly as we were completely engrossed in the performances. At times it felt as if we were witnessing something slightly absurd, like when the children were young and excitedly telling us about the Pokemon game they just played, and although we heard their words, understanding was just outside of our comprehension. At times we thoroughly enjoyed the scenes such as when Rosencranz and Guildenstern played an excellent game of Questions. After leaving the theatre, we went for dinner and spent the entire time talking about what we saw, and what it all meant.

I understand that the Neptune Theatre run is sold out, but the good news for Ontario friends is that the Mirvish Theatre run starts in March!

Whether we experience gardens as destinations (such as a public garden), or a garden as a part of an overall experience (when visiting a community, business, or restaurant), they are an integral factor in the level of enjoyment of those places.
