Today we had the opportunity to share with the fantastic guide Yubelis, who welcomed Karlitos and his friends from Germany. Although the tour was short this time, we were able to tell them the history of the Pearl of America while they told us about their trip and the activities they are doing here, including surfing. In Santa Marta and other neighboring towns in the area they call it 'the green delicacy', and it is well known that children have already tasted, in some way, the green -unripe- banana before their baby teeth come out. Hence, it is not strange to hear: "there is NO better way to raise a kid than feeding them with green bananas". It is the way these communities give meaning to the strength, health and good nutrition of many of their inhabitants.

It is in this area of the Magdalena Department, where the epicenter of the century-old banana agro-industry is located, which has marked not only the folklore and culture of its inhabitants, but also part of the economic and social history of the Colombian Caribbean.

The green banana is a fruit very appreciated by the Colombian coastal gastronomy, perfect for breakfast, but also as an accompaniment to any meat, cheese or soup. As a dish, it has the luxury of wandering around the best tables, surrounded by delicious dishes and tasted by the most refined palates, or of being served in the most humble plantain leaf and cooked in a wood fire in one of our towns. The truth is that in any case, it will be enjoyed as a green delicacy.
