El ajo baja la presión sanguínea, regula el colesterol y estimula la función inmunitaria. He hablado sobre los factores de riesgo de las enfermedades cardíacas, pero ¿qué hay de la inmunidad? Comer ajo parece amortiguar el exceso de actividad del sistema inmunitario, de forma que se suprime la inflamación mientras se aumenta la inmunidad protectora; por ejemplo, la actividad de los linfocitos citolíticos que nuestro cuerpo usa para purgar las células que han sido afectadas por un virus o cáncer.

Si comes un buen diente de ajo crudo triturado, en pocas horas obtendrás una alteración de la expresión de tus genes relacionados con la inmunidad anticancerígena. En diez estudios de población juntos, aquellos que reportaron un mayor consumo de ajo solo tuvieron la mitad del riesgo de cáncer de estómago. Los que comieron más parecían tener tasas de cáncer más bajas que los que comieron menos, lo cual sugiere un efecto protector.

Quienes comen más de un diente de ajo al día parecen tener una mejor función arterial que quienes comen menos de uno. Se aleatorizó a unos pacientes de cardiopatía a recibir ajo en polvo o un placebo dos veces al día durante tres meses. Las personas que tuvieron suerte de estar en el grupo del ajo obtuvieron una mejora bastante grande en la función arterial, con un aumento del 50% al tomar una dosis de 800 mg de ajo en polvo al día. Solo un cuarto de cucharadita. Docenas de estudios sobre el ajo todos juntos muestran que el ajo puede reducir los niveles de colesterol más de 16 puntos.

¿Podría el ajo en polvo retrasar la progresión de la ateroesclerosis? Se comparó al ajo en polvo con un placebo durante tres meses. El grupo del placebo empeoró, que es lo que tiende a suceder. Una revisión sistemática y metaanálisis de ensayos aleatorizados demuestra que el ajo tiene un efecto estadística y clínicamente significativo tanto en la presión sistólica como en la presión arterial diastólica, lo que reduce el número superior casi siete puntos, y el número inferior aproximadamente cinco. Puede que no parezca mucho, pero reducir el número inferior de la presión arterial diastólica en cinco puntos puede reducir el riesgo de apoplejía aproximadamente un tercio y las enfermedades cardíacas un 25%.

En 2016 se publicó un estudio histórico de Harvard que involucró a más de 100 000 personas, y se descubrió que reemplazar la proteína animal por proteína vegetal se asociaba a un menor riesgo de muerte prematura. Lo peor parecía ser la carne procesada como el tocino, así como la proteína de huevo (las claras de huevo), pero el intercambio de solo un 3 por ciento de cualquiera de las proteínas animales (carne procesada, carne no procesada, pollo, pescado, huevos o productos lácteos por proteína vegetal) se asoció con un riesgo significativamente menor del punto final más importante de todos, la muerte.

El IGF-1 es una hormona de crecimiento que promueve el cáncer y es estimulada por la ingesta de proteínas animales. Sospechamos que la conexión con el IGF-1 es de causa y efecto, ya que las personas que nacen con niveles más altos de IGF-1, independientemente de lo que coman, parecen sufrir tasas más altas de diabetes tipo 2 y enfermedades cardiacas.
